Ingredients
  

  • 1 pound chicken breast cubed
  • 2 cups zucchini sliced
  • 8 ounces pasta penne or fusilli
  • 1 cup mozzarella cheese shredded
  • 1 cup marinara sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 teaspoon Italian seasoning

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Cook the pasta according to package instructions until al dente, then drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add the cubed chicken and cook until browned and cooked through.

      Totally get that—this kind of bake can come out a little flat if the seasoning isn’t bumped up. I usually add more garlic (or a pinch of garlic powder) and salt to the marinara too. Also, my oven never browns in 20-25 min unless I crank it a bit or broil for the last 1-2 min.

      Yeah I agree—20–25 min sounds fast, but since the chicken is cooked in the skillet and the pasta is only al dente, it’s basically just heating through and browning. I usually pull it when the cheese starts getting that golden top.

      Yes! Ground chicken works great. Just sauté it in the oil until fully cooked (no pink), then add the garlic and zucchini. You may need to simmer the marinara a minute or two to keep it from getting watery.
