Ingredients
  

  • 1 pound gnocchi store-bought or homemade
  • 1 pound ground beef lean
  • 1 packet taco seasoning store-bought or homemade
  • 1 cup salsa any preferred style
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 can black beans drained and rinsed
  • 1 can corn drained
  • 1 cup sour cream optional, for serving
  • 1 cup chopped cilantro fresh, for garnish

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Cook gnocchi according to package instructions; drain and set aside.
  • In a large skillet, brown the ground beef over medium heat until fully cooked; drain excess fat.
  • Stir in taco seasoning, salsa, black beans, and corn into the cooked beef; simmer for 5 minutes.
  • Add cooked gnocchi to the beef mixture and stir until well combined.
  • Transfer the gnocchi mixture to a baking dish and sprinkle with shredded cheese.
  • Bake in the preheated oven for 15-20 minutes or until cheese is melted and bubbly.
