Ingredients
- 1 pound gnocchi store-bought or homemade
- 1 pound ground beef lean
- 1 packet taco seasoning store-bought or homemade
- 1 cup salsa any preferred style
- 1 cup shredded cheese cheddar or Mexican blend
- 1 can black beans drained and rinsed
- 1 can corn drained
- 1 cup sour cream optional, for serving
- 1 cup chopped cilantro fresh, for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Cook gnocchi according to package instructions; drain and set aside.
- In a large skillet, brown the ground beef over medium heat until fully cooked; drain excess fat.
- Stir in taco seasoning, salsa, black beans, and corn into the cooked beef; simmer for 5 minutes.
- Add cooked gnocchi to the beef mixture and stir until well combined.
- Transfer the gnocchi mixture to a baking dish and sprinkle with shredded cheese.
- Bake in the preheated oven for 15-20 minutes or until cheese is melted and bubbly.
- Garnish with chopped cilantro and serve with sour cream if desired.
