Chicken and Dumplings Soup
A comforting and hearty soup made with tender chicken, flavorful broth, and fluffy dumplings.
Ingredients
- 2 cups chicken breast cooked and shredded
- 1 tablespoon olive oil for sautéing
- 1 cup carrots chopped
- 1 cup celery chopped
- 1 cup onion diced
- 4 cups chicken broth low sodium
- 1 teaspoon salt to taste
- 1/2 teaspoon pepper to taste
- 2 cups flour for dumplings
- 1 tablespoon baking powder for dumplings
- 1/2 teaspoon salt for dumplings
- 1 cup milk for dumplings
- 2 tablespoons butter melted, for dumplings
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onions, carrots, and celery until tender.
- Add chicken broth, cooked chicken, salt, and pepper to the pot. Bring to a simmer.
- In a separate bowl, combine flour, baking powder, salt, milk, and melted butter to form the dumpling dough.
- Drop spoonfuls of dumpling dough into the simmering soup. Cover and cook for 15 minutes, or until dumplings are cooked through.
