Ingredients
  

  • 500 grams gnocchi store-bought or homemade
  • 2 tablespoons olive oil extra virgin
  • 1 onion small, finely chopped
  • 3 cloves garlic minced
  • 250 grams mushrooms sliced
  • 1 cup heavy cream or cooking cream
  • 1/2 cup vegetable broth low sodium
  • 1/2 cup parmesan cheese grated
  • salt to taste
  • black pepper to taste
  • 2 tablespoons parsley chopped, for garnish, fresh

Instructions
 

  • Cook the gnocchi according to the package instructions. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté until soft and translucent, about 3-4 minutes.
  • Add the mushrooms to the skillet and cook until they have released their juice and started to brown, about 5-7 minutes.
  • Stir in the heavy cream and vegetable broth, bringing the mixture to a simmer.

    I tried it but mine turned out bland. I know “salt to taste” is vague, but I followed it and it still needed more. Also, I feel like 1/2 cup broth wasn’t enough to loosen the sauce with my pan.

      Yeah that 1/2 cup broth feels a little skimpy, especially if your pan is dry or the mushrooms don’t release much. I’d add broth a splash at a time until it looks silky instead of thick. Also: don’t forget the pepper—sounds silly but it makes a difference.

      Totally get it—cream sauces can mute flavors fast. I usually salt early with the onions (or even a pinch right after the mushrooms brown) and then do a final salt/pepper at the very end once the cheese melts. If it tasted bland, it probably needed a bit more Parmesan too.
