Salmon Rillettes

April 17, 2024

Salmon rillettes are a luxurious French spread made with a combination of fresh and smoked salmon, gently mixed with butter, crème fraîche, and seasonings. Silky, flavorful, and perfect for entertaining, this dish offers a refined yet rustic way to enjoy salmon in a spreadable form.

Traditionally served as an appetizer, salmon rillettes are rich and savory, with a creamy texture balanced by the smoky depth of the fish. The word “rillettes” comes from French cuisine, where it usually refers to a preserved meat spread, commonly pork or duck. The salmon version is a lighter, more delicate twist that pairs beautifully with crusty bread, crackers, or cucumber slices.

To make salmon rillettes, start by poaching fresh salmon until just cooked and flaky. Combine it with finely chopped smoked salmon, softened butter, crème fraîche or cream cheese, lemon juice, and herbs like dill or chives. Some versions include a splash of white wine or shallots for added flavor. Everything is gently mixed to preserve a slightly chunky texture, then chilled to allow the flavors to meld.

Serve the rillettes cold or at room temperature as a starter or part of a charcuterie board. It’s an ideal dish for brunches, holiday gatherings, or picnics, and pairs beautifully with a crisp glass of white wine or Champagne.

Elegant yet easy to prepare, salmon rillettes embody the best of French culinary tradition: rich in flavor, simple in ingredients, and perfect for sharing. It’s a make-ahead recipe that improves with time, making it a host’s best friend.

Whether you’re introducing guests to something new or indulging in a bit of French flair for yourself, salmon rillettes offer a delicious and sophisticated option that’s both comforting and refined.

This is a joke, right? Because salmon and butter? Who thought that was a good idea??

    1. User avatar deon.monahan95 says:

      5 stars
Actually, it’s really good! The butter makes it creamy and the salmon is so flavorful. You might just need to try it!

Eh, not my favorite. Maybe salmon is not for everyone. 🤷‍♂️

I tried it and my kids didn’t like it…too fishy for them.

    1. User avatar fernando.jenkins99 says:

      3 stars
Fishy? I thought it was great! You might just need to get them used to more fish in their diet. Can’t hurt to try again!

    2. 4 stars
I’m sorry to hear that! Maybe try mixing in some cream cheese next time to balance the fishy taste? My kids love it that way!

  10. User avatar Charlsie Beier says:

    3 stars
For me, it was too buttery. Maybe less butter next time?

  11. User avatar nigel.carroll says:

I used frozen salmon and it worked just fine. Good job on the recipe!

    1. User avatar guy.hartmann39 says:

      2 stars
Um, I don’t think frozen salmon is the same! Smoked should be fresh to really taste it right…

    2. 4 stars
Thanks for sharing! I always thought frozen salmon wouldn’t be as good, but sounds like it worked out well for you.

  13. User avatar Spriggan Earth Mother says:

I made it without dill and added some garlic instead. Sooo good!

    1. User avatar Ken Schmitt says:

      2 stars
I don’t know about garlic in salmon rillettes… Isn’t that a bit odd? Dill is traditional for a reason!

    2. User avatar larry.koepp31 says:

      5 stars
That’s interesting! Garlic does add a nice kick. I might try that next time!

  14. User avatar Gail Andrews says:

Where’s the cream cheese?! You can’t make rillettes without it. This is misleading!

I dont have a food processor, can I mix it by hand? 💁‍♀️

  16. User avatar chris.botsford44 says:

OK, but I think you could just buy it premade. I’m lazy, haha. Medium effort for me.

    1. User avatar winona.hamill1961 says:

      4 stars
But making it yourself is so much better! You can adjust the flavors just how you like them. Plus, it’s not that hard! Trust me, it’s worth the effort.

What’s a food processor? Can I use a blender instead?

    1. User avatar Draugr Scourge says:

      2 stars
Idk what a food processor is but a blender should work too, right? Just blend it real good!

    2. User avatar sergio.kemmer66 says:

      4 stars
A food processor is like a blender but better for stuff like this! You can use a blender but it might not get it as smooth.

  19. User avatar Tyrone Skiles PhD says:

    3 stars
It tasted okay, but I thought it would be creamier! Needs something more.

What if I use canned salmon? Will it work?

    1. User avatar Ford Prefect says:

      2 stars
Why would you use canned? Fresh is way better! Don’t ruin the recipe!

    2. User avatar Sue-Belle says:

      4 stars
Canned salmon should work fine! Just make sure to drain it well. Might be a bit different texture, but I think it will taste good.

  33. User avatar harrison.fisher says:

    2 stars
Not sure about this one. Maybe a bit too fishy for my taste?

  34. User avatar dusty.oconnell says:

Too complicated. Just stick to a simple fish sandwich instead! 😒

    1. User avatar jami.willms1965 says:

      2 stars
Nah, simple is better! Who wants to make all that when a fish sandwich is ready in 5 mins?

    2. User avatar Cassiopeia says:

I’m glad to hear that! I’ve been looking for easy appetizers for gatherings. How did you serve it with the crackers?
