Salmon Rillettes

April 17, 2024

Salmon rillettes are a luxurious French spread made with a combination of fresh and smoked salmon, gently mixed with butter, crème fraîche, and seasonings. Silky, flavorful, and perfect for entertaining, this dish offers a refined yet rustic way to enjoy salmon in a spreadable form.

Traditionally served as an appetizer, salmon rillettes are rich and savory, with a creamy texture balanced by the smoky depth of the fish. The word “rillettes” comes from French cuisine, where it usually refers to a preserved meat spread, commonly pork or duck. The salmon version is a lighter, more delicate twist that pairs beautifully with crusty bread, crackers, or cucumber slices.

To make salmon rillettes, start by poaching fresh salmon until just cooked and flaky. Combine it with finely chopped smoked salmon, softened butter, crème fraîche or cream cheese, lemon juice, and herbs like dill or chives. Some versions include a splash of white wine or shallots for added flavor. Everything is gently mixed to preserve a slightly chunky texture, then chilled to allow the flavors to meld.

Serve the rillettes cold or at room temperature as a starter or part of a charcuterie board. It’s an ideal dish for brunches, holiday gatherings, or picnics, and pairs beautifully with a crisp glass of white wine or Champagne.

Elegant yet easy to prepare, salmon rillettes embody the best of French culinary tradition: rich in flavor, simple in ingredients, and perfect for sharing. It’s a make-ahead recipe that improves with time, making it a host’s best friend.

Whether you’re introducing guests to something new or indulging in a bit of French flair for yourself, salmon rillettes offer a delicious and sophisticated option that’s both comforting and refined.

This was okay, but I found it a bit too salty for my taste. Maybe I just overdid the salt? Not sure.

    1. 4 stars
I think it might be the salt you added. Try using unsalted butter next time! It helps control the saltiness.

    2. 3 stars
Salt? I love salt! Makes everything tastier, haha. But I guess each to their own.

This is a joke, right? Because salmon and butter? Who thought that was a good idea??

    1. User avatar deon.monahan95 says:

      5 stars
Actually, it’s really good! The butter makes it creamy and the salmon is so flavorful. You might just need to try it!

  3. User avatar Keneth Goyette says:

    2 stars
Eh, not my favorite. Maybe salmon is not for everyone. 🤷‍♂️

  4. 5 stars
Salmon rillettes sounds fancy! I just call it salmon spread but it’s kinda the same, right?

  5. User avatar Dr. Zoe Torp says:

I don’t get why you’d want salmon combined with butter… doesn’t sound appetizing at all. 2 stars.

    1. User avatar lorie.torp1980 says:

      4 stars
I get where you’re coming from, but trust me, the combination is really delicious! The butter makes it creamy and rich. You should at least give it a try!

Is this really ‘smoked’ salmon? Seems like regular to me.

  9. User avatar millard.wiegand92 says:

Salmon with butter? Eww that’s gross! Can’t believe people eat this.

I tried it and my kids didn’t like it…too fishy for them.

    1. User avatar fernando.jenkins99 says:

      3 stars
Fishy? I thought it was great! You might just need to get them used to more fish in their diet. Can’t hurt to try again!

    2. 4 stars
I’m sorry to hear that! Maybe try mixing in some cream cheese next time to balance the fishy taste? My kids love it that way!

    1. User avatar guy.hartmann39 says:

      2 stars
Um, I don’t think frozen salmon is the same! Smoked should be fresh to really taste it right…

    2. 4 stars
Thanks for sharing! I always thought frozen salmon wouldn’t be as good, but sounds like it worked out well for you.

  19. User avatar Spriggan Earth Mother says:

    5 stars
I made it without dill and added some garlic instead. Sooo good!

    1. User avatar Ken Schmitt says:

      2 stars
I don’t know about garlic in salmon rillettes… Isn’t that a bit odd? Dill is traditional for a reason!

    2. User avatar larry.koepp31 says:

      5 stars
That’s interesting! Garlic does add a nice kick. I might try that next time!

  20. User avatar russ.bartoletti5 says:

    2 stars
I thought rillettes always had meat in them? This is just fish, right? Confused. 🤔

  21. User avatar Gail Andrews says:

    1 star
Where’s the cream cheese?! You can’t make rillettes without it. This is misleading!

  22. User avatar georgia.torp62 says:

    1 star
Who’s got time for this? Just buy some from the store. 1 star.

  23. 1 star
Naaah, didn’t like it. The butter made it too rich, I prefer my salmon grilled.

    1. User avatar winona.hamill1961 says:

But making it yourself is so much better! You can adjust the flavors just how you like them. Plus, it’s not that hard! Trust me, it’s worth the effort.

  27. 2 stars

What’s a food processor? Can I use a blender instead?

    1. User avatar Draugr Scourge says:

Idk what a food processor is but a blender should work too, right? Just blend it real good!

    2. User avatar sergio.kemmer66 says:

      4 stars
A food processor is like a blender but better for stuff like this! You can use a blender but it might not get it as smooth.

  30. User avatar vilma.green says:

    3 stars
Um, how much salmon do you actually need? You just say 200 g without any measurements. Not cool.

    1. User avatar laurice.walsh68 says:

      4 stars
I get your point! Maybe they should have mentioned more details. But 200 g of salmon is a good amount for a decent spread, don’t you think?

  31. User avatar Tyrone Skiles PhD says:

    3 stars
It tasted okay, but I thought it would be creamier! Needs something more.

  32. User avatar riley.fahey24 says:

    4 stars
Simple ingredients but tastes amazing. I added some capers too! 4/5 from me.

  33. User avatar damon.waelchi56 says:

    4 stars
Quick and easy recipe. I used some garlic in there too. Yum!

  38. User avatar Frankie and Benjy says:

Too salty for my taste! Maybe less salt next time? I don’t know, just way too much!

  39. User avatar lyndon.gleason says:

    3 stars
Tastes great but I’m not sure about the dill. It’s a weird flavor with salmon. Could just be me tho.

  40. User avatar w00d_ch0p says:

    5 stars

  44. User avatar tony.brown44 says:

    4 stars
I tried it with cream cheese instead and it turned out great! Just a thought.

  48. 3 stars
What if I use canned salmon? Will it work?

    1. User avatar Ford Prefect says:

      2 stars
Why would you use canned? Fresh is way better! Don’t ruin the recipe!

    2. User avatar Sue-Belle says:

      4 stars
Canned salmon should work fine! Just make sure to drain it well. Might be a bit different texture, but I think it will taste good.

  49. User avatar marcellus.champlin says:

    4 stars
I was skeptical at first, but this was surprisingly good. Just make sure you don’t overprocess it or it’ll be too mushy.

  50. User avatar harrison.fisher says:

But isn’t parsley too different? I don’t know… I guess if you liked it, that’s all that matters!
