I tried this once and it failed: my eggs were impossible to halve cleanly and the yolk mix tasted flat. I might’ve under-seasoned—salmon can be salty though.
I dunno… halving eggs “cleanly” is basically impossible, lol. Mine always looks messy but still tastes fine. If the yolk tastes flat, maybe you didn’t mash enough? Also smoked salmon can be salty, so add salt last, after tasting the filling.
