Ingredients
  

  • 1 pound ground beef
  • onion small, diced
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • 1/2 tsp thyme dried
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 eggs large
  • 1/2 cup feta cheese crumbled
  • 2 tbsp parsley chopped fresh
  • 4 Tomatoes large, halved
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions
 

  • In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  • Add the diced onion, minced garlic, dried oregano, dried thyme, salt, and black pepper to the skillet. Cook for an additional 2 minutes.
  • In a separate bowl, whisk the eggs together. Pour the whisked eggs into the skillet with the beef and onion mixture. Stir to combine.
  • Continue cooking the mixture over medium heat, stirring occasionally, until the eggs are cooked to your desired consistency.
  • While the eggs are cooking, preheat a grill or grill pan over medium-high heat. Brush the halved tomatoes with olive oil and season with salt and pepper.
  • Grill the tomatoes for about 5 minutes on each side, until they are slightly softened and grill marks appear.
  • Serve the beef and egg scramble hot, topped with crumbled feta cheese, chopped fresh parsley, and the grilled tomatoes on the side.
