Mornings don’t have to be dull when you can start the day with something as satisfying and full of flavor as Mediterranean breakfast beef. This dish brings together the richness of seasoned ground beef with the bright, fresh ingredients typical of Mediterranean cuisine, all in a hearty and energizing breakfast.
At its core, Mediterranean breakfast beef is built on a simple idea, take high-quality ground beef and cook it with olive oil, garlic, onion, and a mix of warming spices like cumin and paprika. The result is a savory base that’s both comforting and robust. Add in chopped tomatoes, fresh herbs like parsley or mint, and maybe even a squeeze of lemon, and you get a dish that feels both rustic and vibrant.
This breakfast pairs beautifully with a variety of sides. Scoop it into a warm pita or flatbread, serve it alongside soft scrambled eggs or a sunny-side-up egg, or spoon it over a bowl of herbed couscous or leftover roasted vegetables. Add a dollop of Greek yogurt or a crumble of feta on top, and the layers of flavor and texture really come alive.
What makes this breakfast truly special is how versatile it is. You can prep the beef mixture ahead of time and reheat it during the week, making it a smart and flavorful option for busy mornings. You can also tailor it to your preferences, spice it up with chili flakes or cool it down with chopped cucumber and tomato salad on the side.
Mediterranean breakfast beef is ideal for anyone who wants to start the day with something more filling and exciting than toast or cereal. It’s a dish rooted in wholesome ingredients, inspired by the sun-drenched kitchens of the Mediterranean, and made for fueling your day in the most delicious way.
Whether you’re hosting brunch or just feeding yourself before a packed schedule, this dish proves that breakfast can be anything but boring. It’s savory, satisfying, and simple, exactly what a good morning should taste like.

Ingredients
- 1 pound ground beef
- onion small, diced
- 2 cloves garlic minced
- 1 tsp dried oregano
- 1/2 tsp thyme dried
- 1/2 tsp salt
- 1/4 tsp black pepper
- 8 eggs large
- 1/2 cup feta cheese crumbled
- 2 tbsp parsley chopped fresh
- 4 Tomatoes large, halved
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
- Add the diced onion, minced garlic, dried oregano, dried thyme, salt, and black pepper to the skillet. Cook for an additional 2 minutes.
- In a separate bowl, whisk the eggs together. Pour the whisked eggs into the skillet with the beef and onion mixture. Stir to combine.
- Continue cooking the mixture over medium heat, stirring occasionally, until the eggs are cooked to your desired consistency.
- While the eggs are cooking, preheat a grill or grill pan over medium-high heat. Brush the halved tomatoes with olive oil and season with salt and pepper.
- Grill the tomatoes for about 5 minutes on each side, until they are slightly softened and grill marks appear.
- Serve the beef and egg scramble hot, topped with crumbled feta cheese, chopped fresh parsley, and the grilled tomatoes on the side.
Easy and delish! I loved the juicy tomatoes on the side. Definitely tastes like the Mediterranean!
This recipe is fantastic! The flavors are just perfect together. Will make it again for sure.
Will try it! Just a question, do the tomatoes really need to be grilled? Can’t I just eat them raw?
Heard you can cook it with chicken too? 🤔 Sounds like a downgrade. But, anyway, good job!
I might be missing something but what’s with the cooking order? Seemed a bit off to me.
I didn’t have any feta, so I used cheddar. It turned out great anyway! Still a hit with the family.
Looks good but I dunno about ground beef for breakfast. Seems weird to me. Eggs are supposed to be light and not heavy.
Isn’t this basically just a fancy omelet? Not impressed. Meat and eggs don’t really mix well.
I think this dish is something special! It’s not just an omelet; it’s packed with flavor and protein. Give it a try before judging!
Yum! I added some spinach to the scramble. Made it healthier! My kids loved it too! 🎉
Not bad, but not great either. Just ok. I think I’ll stick to my usual breakfast.
Yummy! I made this today, but I used turkey instead of beef. Still turned out great! Will definitely make it again!
Made this for brunch, and everyone loved it! Will make again.
Grilling tomatoes? Who does that? Just eat them raw. You can’t be serious. 1 star for wasting good veggies.
I don’t have fresh tomatoes, used canned ones instead. Still tasted alright. But I’ll try again when I get fresh ones.
I didn’t have feta, so I used cheddar instead. Still turned out okay, I guess. Not as great as everyone says though. 3 stars.
Great recipe! I used leftover roast beef instead of ground beef and it worked fine.
That sounds like a smart way to use leftovers! I’m definitely going to try that.
I don’t get why you need so many eggs. This seems like a waste of good beef, honestly. 2/5.
I totally get what you mean! Seems like a lot of eggs, but maybe it’s just to fluff it up? 🤷♂️
I didn’t have feta, so I used cheddar. Still turned out good I guess.
lol, I accidentally added 1 tsp of thyme instead of 1/2. Oops! Still was good tho!
This looks amazing! Can’t wait to try the flavors together.
Wow, this sounds so delicious! I love Mediterranean flavors. What’s your favorite part about it?
Looks good, but I don’t know about mixing beef and eggs. Isn’t that a bit weird?
Wow, who knew grilling tomatoes would make such a difference? This was delicious!
I dunno, grilled tomatoes? Sounds weird, like is it really that good? I always just eat them raw.
Grilling tomatoes is a game changer! Adds such a nice flavor. I’m gonna try it next time for sure.
Isn’t this just scrambled eggs with beef? Sounds too simple.
So good! I didn’t have parsley, so I used cilantro. Tasted yum!
This recipe is AMAZING! I’m a huge fan of Mediterranean flavors, and this hits the spot. The feta adds the perfect tang!
This recipe is simply amazing! I added some spinach for extra greens and it turned out delicious! My family loved it. 5 stars!
I gotta say, this recipe is pretty bland. Needs more spices if you ask me.
Yummy! Easiest recipe ever! 😋
Is it really Mediterranean if there’s beef? just saying.
This was awesome! The beef and eggs combo is just perfect. My kids loved it!
Not my thing… I don’t like cooked tomatoes. I didn’t grill them and replaced them with avocado. Was okay, I guess.
Easy and quick! I made this in less than 30 minutes. Perfect for busy mornings!
Not for me. Beef and eggs? What are we, cavemen? I’ll stick to my oatmeal.
I don’t know about mixing beef with eggs. Seems weird.
Yum! Simple to make and my kids ate all of it. Definitely adding this to our weeknight meals!
Very quick and easy to make! Highly recommend for a busy morning! Just what I needed!
Grilled tomatoes? Wait, u grill them? Nobody has time for that! Just throw everything in and call it a day.
Delicious! The feta adds such a nice tang. Totally recommend!
I dunno… looks kinda bland to me. Maybe add some hot sauce? Just saying.
I tried this recipe and it was super tasty! Feta really does make it special. Thanks for sharing!
This recipe was fantastic! I loved the flavors of the beef and feta. Grilling the tomatoes made a huge difference!
Sounds good, but I think it could use some more spices. Maybe some chili or cumin? Just a thought!
I’m so glad you enjoyed it! The grilled tomatoes really elevate the dish, don’t they? I’ll definitely be making this again.
I don’t know why everyone loves this. The egg scramble was kinda dry and the beef didn’t have much seasoning. I’ve had better.
Needed a bit more salt. Follow the instructions, but not the spice amounts. lol
Grilled tomatoes? Ain’t nobody got time for that!
Grilled tomatoes are awesome! They add a fresh flavor. You should give it a shot, it’s worth it!
Nah, I don’t see the point. Just throw those tomatoes in the scramble. Who has time for that extra step?
This is not Mediterranean, where’s the olives? Was expecting more zest. 😒
My kids loved this, but I thought it was a bit salty. Maybe reduce the salt by half next time?
Yum! I added some hot sauce and it took it to the next level. Definitely making again!
I don’t understand why we need so many eggs. Is that even necessary? Seems like a waste. I usually just use 3.
This is how my mom used to make it! Brings back memories. Very tasty and easy to follow. Thx for posting! 4/5.
idk it was alright… not gonna win any chef awards here lol
Chef awards are overrated. I’d eat it! 😂
Honestly, I think it looks tasty! Maybe you just gotta season it more? 🤷♂️
Yumm, love it! 10/10, which is like, my rating 😂. I added some hot sauce for a kick!
I love the idea of adding hot sauce! I’ll have to try that next time. 😋
10/10? Really? I don’t know, I found it kinda bland without spices. 🤔
Made this for brunch and it was a hit! The grilled tomatoes just take it over the top. Will make again for sure! 😍
