Ingredients
  

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 cup milk You can use any type of milk
  • 1 egg beaten
  • 2 tablespoons unsalted butter melted
  • 1 cup apple peeled, cored, and finely chopped
  • 1 teaspoon vanilla extract

Instructions
 

  • In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
  • In another bowl, combine the milk, beaten egg, melted butter, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and mix until just incorporated. Do not overmix.
  • Fold in the chopped apple pieces.
  • Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook until bubbles form on the surface, then flip and cook until browned on the other side.
