In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
In another bowl, combine the milk, beaten egg, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients and mix until just incorporated. Do not overmix.
Fold in the chopped apple pieces.
Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook until bubbles form on the surface, then flip and cook until browned on the other side.
Serve warm with your favorite syrup or toppings, cinnamon and apple slices.
