Ingredients
  

  • 2 cups all-purpose flour
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 3/4 cup milk
  • 2 eggs large, separated
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 2 cups blueberries fresh
  • 1/4 cup sugar for sauce
  • 1 tbsp lemon juice for sauce
  • 1 tbsp cornstarch for sauce, mixed with 2 tbsp water

Instructions
 

  • Preheat your waffle iron according to the manufacturer’s instructions.
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  • In another bowl, beat the egg yolks. Add the milk, oil, and vanilla extract, mixing well.
  • Add the wet ingredients to the dry ingredients and stir until just combined.
  • In a separate bowl, beat the egg whites until stiff peaks form. Fold the egg whites into the batter gently.
  • Pour the batter onto the preheated waffle iron and cook until golden brown and crisp.
  • For the blueberry sauce, combine the blueberries, sugar, and lemon juice in a saucepan over medium heat.
  • Bring to a simmer and cook for about 5 minutes, until the blueberries begin to break down.
  • Stir in the cornstarch mixture and cook for another 1-2 minutes until thickened.
  • Serve the waffles warm, topped with the blueberry sauce.

      I had the same issue! Maybe you didn’t cook the sauce long enough after adding the cornstarch? Sometimes, it needs more time to thicken up properly. Don’t give up, it can happen!

      The corn stuff is just to thicken the sauce, but it’s not necessary if you don’t want it! I personally find it helps a lot with the texture. Give it a try!
