Greek Chicken Stew

Ingredients
- 1 kg chicken thighs
- 2 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic minced
- 2 carrots, sliced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 400 g canned diced tomatoes
- 1 cup chicken broth
- 2 tbsp tomato paste
- 2 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add the onion and garlic and cook until softened, about 5 minutes.
- Add the chicken thighs to the pot and cook until browned on all sides.
- Add the carrots, red bell pepper, and zucchini to the pot and cook for another 5 minutes.
- Stir in the diced tomatoes, chicken broth, tomato paste, dried oregano, dried thyme, and dried rosemary.
