Ingredients
  

  • 4 sheets rice paper
  • 1 mango peeled and sliced into thin strips
  • 1/2 cup fresh mint leaves loosely packed
  • 1 cucumber cut into matchsticks
  • 1 carrot peeled and julienned
  • 1/2 cup vermicelli noodles cooked and drained

Instructions
 

  • Prepare all the filling ingredients and have them ready at your station.
  • Soak rice paper sheets in warm water until pliable, then lay them on a damp towel.
  • Place mango slices, mint leaves, cucumber, carrot, and vermicelli noodles on the lower third of the rice paper.
  • Fold the bottom of the rice paper over the filling, then fold in the sides and roll tightly. Repeat with remaining ingredients.
  • Serve immediately with your favorite dipping sauce.
