As the days grow longer and flowers begin to bloom, there’s no better time to reset and refresh with meals that feel just as light and energizing. Enter Spring Detox Minestrone Soup, a vibrant, veggie-packed bowl of goodness designed to nourish your body while celebrating the season’s freshest flavors.
Unlike heavier winter versions, this springtime minestrone skips the starchy potatoes and thick pasta for a lighter, cleaner take. It features seasonal vegetables like asparagus, zucchini, spinach, peas, and carrots, plus detox-friendly ingredients like garlic, leeks, and lemon juice that support digestion and brighten the flavor.
What really makes this soup special is its flexibility. Use whatever spring produce you have on hand, and don’t be afraid to swap in your favorites. Add fresh herbs like parsley or basil for a burst of green, and if you’re craving a bit more substance, toss in a handful of quinoa or a scoop of white beans for protein.
To make it, start by sautéing your aromatics, think leeks, garlic, and celery, in a bit of olive oil until fragrant. Then add vegetable broth and simmer with chopped carrots, zucchini, and green beans. Right before serving, stir in spinach, peas, lemon juice, and any delicate herbs to preserve their color and nutrients.
The result is a comforting yet refreshing soup that leaves you feeling full but never weighed down. It’s perfect for a light lunch, a healthy dinner, or as part of a multi-day detox.
Serve it with a slice of crusty whole grain bread or a side of avocado toast for a balanced, nourishing meal. It also stores well, making it a great option for meal prep or quick weeknight dinners.
This Spring Detox Minestrone is more than just soup, it’s a celebration of new beginnings and clean eating. Bright, colorful, and full of life, just like the season itself.

OMG, this is soooo good! I made it for my family, and they all loved it ❤️.
This soup is delicious! Perfect for spring. 🙂
Tasty and colorful! My kids loved it too! Will be my go-to for family dinners from now on!
So glad your kids loved it! It’s a great way to sneak in those veggies! 😊
Yummy soup, much wow! Did add some chili flakes for kick.
Sounds delicious! I love the idea of adding chili flakes for extra heat. Can’t wait to try this!
So fresh! I added some chili flakes for a kick. 🥵
This soup is soooo good! Perfect for springtime! 🌱
I tried making this and it was a total disaster! The veggies were too mushy! 😩
Why do you need whole wheat pasta? Just use regular, what’s the diff?
I dunno, I think there’s too many veggies. Looks a bit crowded. 🤔
Yum! Never made soup from scratch before. This was easy-peasy! 🍜
This is a recipe? More like a list of ingredients. I’m confused.
Delicious! I added some lemon juice at the end and it really brightened the flavors. Yum!
Why is it called detox? Seems like just a regular soup. 🤷♂️
Detox just means it’s full of good stuff! It helps clean out your system, but yeah, it does sound like a normal soup too. 😅
Honestly, who puts beans in soup? This ain’t chili. I’ll stick to my recipe.
What can I say…it’s soup. Just made it, tastes alright. Nothin special, ya know?
Simple and healthy, but my kids didn’t like it. Maybe add some cheese next time?
Cheese would definitely make it more appealing for kids! Maybe try blending in some cheddar next time.
Made this for my lunch meal prep, really easy to make. Highly recommend!
Minestrone?? I thought it was Italian food. Why is it called detox? 🤷♂️
Great question! It’s called detox because it’s packed with healthy veggies. 🤔
Tasted good but my kids didn’t like it. Too many veggies.
Yeah, too many veggies can be a bummer. But it’s really healthy, right? Just add some crackers or bread maybe.
You know, kids can be picky! Maybe try blending the soup next time? Just an idea.
Absolutely love this recipe! I swapped the beans for lentils tho. Still yum!
Easy to make but mine came out a bit bland. Needed more salt for sure.
Not clear on what to do with the pasta. Do I cook it before putting it in?
This soup is so delicious and healthy! Loved the flavors. Definitely gonna make it again.
Healthy? Maybe… but I’m not sure about the whole wheat pasta thing. Can I use regular pasta instead?
I totally agree! This soup is awesome. I never thought detox soup could taste so good!
I skipped the pasta since I’m on a diet, and it turned out fine for me.
That’s interesting! I never thought of skipping pasta in a soup. Did it still have enough flavor?
Not worth the effort. Took too long to chop everything. I prefer quick meals. Maybe for someone who has time…
It was okay, but too much green stuff for my taste. I thought it would be more filling.
I don’t think you can detox with soup. Just eat real food!
I was skeptical about vegan soup, but this one changed my mind. It’s really filling and satisfying!
This soup is amazing! Full of flavor and so healthy. Can’t believe I didn’t try it earlier. Will definitely make again!
It looks good, but I’m not sure about the whole wheat pasta. Isn’t it kind of heavy for a soup?
I completely agree! This soup is a game changer! I added some lemon juice to mine, and it was even better!
it was kinda bitter. Did I do something wrong? I followed the recipe to the letter. 😬
Very refreshing! Just what I needed for spring. I could eat this every day! 😋
Not a fan. The dish turned out bland. I added some hot sauce to spice it up!
I get what you mean! Sometimes the flavors just don’t pop. Hot sauce is a great fix, though! Maybe try adding some herbs next time too.
It was okay, but I think it needs more seasoning. I added some chili flakes and it was better. Not sure if I’d make it again though.
