Ingredients
  

  • 2 cans chickpeas rinsed and drained
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 8 cups romaine lettuce chopped
  • 1/2 cup parmesan cheese grated
  • 1 cup croutons
  • For the dressing:
  • 1/4 cup mayonnaise
  • 2 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 clove garlic minced
  • Salt and pepper to taste

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, toss the chickpeas with olive oil, garlic powder, smoked paprika, salt, and pepper.
