Grilled Beef and Zucchini Fritters

August 9, 2023

Delicious grilled beef and zucchini fritters that make for a perfect appetizer or main course.

Grilled Beef and Zucchini Fritters bring together hearty and fresh flavors in a dish that’s perfect for a satisfying lunch, light dinner, or even as a protein-packed snack. These fritters are a clever way to use ground beef and zucchini in a balanced recipe that highlights texture, spice, and grilled goodness.

The key to making great fritters is achieving the right consistency. Start with grated zucchini, which should be salted and left to sit for a few minutes to draw out excess moisture. Once drained and squeezed, the zucchini is mixed with ground beef, finely chopped onion or scallion, minced garlic, and a mix of spices like cumin, paprika, black pepper, and a little chili powder for kick. A touch of flour and egg binds everything together into a batter-like mixture that holds its shape well on the grill.

Instead of frying, these fritters are grilled, which adds a smoky depth and keeps them lighter. Grilling also helps them form a crispy exterior while keeping the inside juicy and tender. They can be shaped into patties or smaller rounds depending on how you plan to serve them. Grilled beef and zucchini fritters are done when they have strong grill marks, are firm to the touch, and cooked through in the center.

For serving, you can go in a few directions. They pair beautifully with a dollop of Greek yogurt or a lemon-garlic dipping sauce. A fresh herb salad or tangy slaw on the side cuts through the richness of the beef. For a heartier meal, tuck them into pita with lettuce and tomato, or serve them over couscous or rice.

This dish is not only flavorful but also versatile. It’s a great way to use up summer zucchini and sneak some extra vegetables into your meal without compromising on taste. Whether you’re cooking outdoors or on a stovetop grill pan, these fritters are quick to prepare, easy to customize, and sure to be a hit at your table.

For people saying they fell apart, maybe you need to use more egg? Or are my cooking skills just better? 🤷‍♂️

I doubt it’s just about eggs. I followed the recipe and they still crumbled. Maybe a secret ingredient you didn’t mention? 🤔

I don’t get why people put zucchini in everything. It’s all soggy. I’m sticking to classic beef patties.

I dont know… they turned out kinda mushy, not like the pic. Maybe I added too much zucchini?

I tried this recipe but they fell apart on the grill. Maybe I needed to add more breadcrumbs? Not sure if I’ll try again…

  6. 1 star
Yuk! Didn’t like it at all. Too much zucchini. Why not just have beef burgers?

  7. User avatar devin.ratke49 says:

    3 stars
Hmmm, not what I expected. The zucchini made it mushy. Gonna try to freeze leftovers.

  8. User avatar leanna.hartmann says:

Can I make these in the oven instead? My grill broke last week.

  9. User avatar reagan.carter25 says:

Really good! The zucchinis were watery though, next time I’ll squeeze them first.

I don’t think zucchini belongs in beef fritters. It was kinda weird texture for me.

Didn’t like the texture much, too mushy. Think I’ll stick with regular burgers instead. 👎

    1. 3 stars
Mushy? Nah, I thought they were perfect! You just gotta adjust your expectations, I guess. Not everything needs to be like a regular burger. 🙄

    2. User avatar vernon.mueller3 says:

      4 stars
I actually loved the texture! They’re supposed to be a bit soft because of the zucchini. You might just be used to the classic burgers. Give them another try! 😊
