Ingredients
  

  • 1 tablespoon olive oil extra virgin
  • 1 large onion chopped
  • 5 whole carrots peeled and chopped
  • 3 cups vegetable broth
  • 1 clove garlic minced
  • 1/2 teaspoon ground ginger
  • basil optional for serving

Instructions
 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and sauté until translucent, about 5 minutes.
  • Stir in the garlic and ground ginger, and cook for another minute.
  • Add the chopped carrots and vegetable broth. Bring to a boil.
  • Reduce the heat and let it simmer for about 20 minutes or until the carrots are tender.
