Christmas Carrot Soup
A wholesome and simple carrot soup that is both nourishing and satisfying.
Ingredients
- 1 tablespoon olive oil extra virgin
- 1 large onion chopped
- 5 whole carrots peeled and chopped
- 3 cups vegetable broth
- 1 clove garlic minced
- 1/2 teaspoon ground ginger
- basil optional for serving
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the garlic and ground ginger, and cook for another minute.
- Add the chopped carrots and vegetable broth. Bring to a boil.
- Reduce the heat and let it simmer for about 20 minutes or until the carrots are tender.
- Puree the soup with an immersion blender until smooth. Season with salt and pepper to taste.
- Serve hot with a swirl of fresh basil if desired.

I tried making this soup, but it didn’t turn out right. Maybe I used too much broth? It was super watery.
This soup is absolutely delicious! I added a pinch of cayenne for a kick, and it turned out amazing!
Good recipe, but is ginger really necessary? I think it would taste better without it. Just my opinion tho.
