Instructions
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and sauté until translucent, about 5 minutes.
Stir in the garlic and ground ginger, and cook for another minute.
Add the chopped carrots and vegetable broth. Bring to a boil.
Reduce the heat and let it simmer for about 20 minutes or until the carrots are tender.
Puree the soup with an immersion blender until smooth. Season with salt and pepper to taste.
Serve hot with a swirl of fresh basil if desired.
