Soft caramel candies are a timeless treat loved for their rich, buttery flavor and melt-in-your-mouth texture. These golden bites of sweetness are made by slowly cooking a mixture of sugar, butter, cream, and sometimes corn syrup to the perfect temperature, resulting in a smooth, chewy consistency that’s irresistibly soft without being sticky.
The charm of soft caramels lies in their balance. The slow cooking process allows the sugars to caramelize gently, developing deep, complex flavors with hints of toffee and vanilla. A touch of salt often enhances the sweetness, making salted caramels a popular variation. The final product is poured into a tray, cooled, and then cut into small squares or rectangles, often individually wrapped in wax paper for a nostalgic, homemade feel.
What makes soft caramel candies stand out is their versatility. They can be enjoyed on their own, added to dessert recipes, or melted down for sauces and coatings. Whether you’re savoring them with a cup of coffee or gifting them during the holidays, they bring a sense of warmth and indulgence.
Making soft caramels at home may seem intimidating, but it’s a rewarding process that requires just a few simple ingredients and a candy thermometer. Precision is key—reaching the right temperature (typically between 240°F and 245°F) ensures the ideal soft, chewy texture.
Soft caramel candies evoke comfort and tradition. They’re often associated with festive seasons, handmade gifts, and special moments shared with family and friends. Their buttery richness and gentle sweetness appeal to both kids and adults, making them a universally loved confection.
Whether homemade or store-bought, soft caramel candies continue to be a beloved classic—simple, nostalgic, and completely delicious. Each bite offers a moment of sweet satisfaction that never goes out of style.

Ingredients
- 1 cup granulated sugar
- 1 cup brown sugar packed
- 1 cup butter cut into pieces
- 1 cup light corn syrup
- 1 can sweetened condensed milk
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Line an 8-inch square pan with parchment paper, allowing the paper to drape over the edges. Butter the parchment paper lightly.
- In a large, heavy-bottomed saucepan, combine granulated sugar, brown sugar, butter, corn syrup, condensed milk, and salt. Stir over medium heat until butter is melted and the mixture is smooth.
- Increase heat to medium-high and bring the mixture to a boil, stirring constantly.
- Cook, stirring constantly, until the mixture reaches 245°F (firm-ball stage) on a candy thermometer.
- Remove the pan from heat and stir in the vanilla extract.
- Pour the hot caramel into the prepared pan. Let it cool completely at room temperature.
- Once cooled, lift the caramel from the pan using the overhanging parchment paper. Cut into small squares or desired shapes.
- Wrap each candy square in wax paper to prevent them from sticking together.

Um, can I just use regular sugar without the brown? Not sure if it’ll work…
Soo good, I eat them all. Yummy!
I made these too! They were gone in a day. Sooo delicious! 😋
Not sure about this recipe. These sound way too sweet for me. 🤔
I added a pinch of cinnamon for extra flavor. Yum! Will definitely make again.
I tried following the instructions, but I don’t have a candy thermometer. Can I just guess the temperature? Nobody got time for that fancy stuff!
Guessing could work, but it’s risky! I’ve messed up my candies before trying to eyeball it. Maybe try boiling down until it’s thick enough! Good luck! 🍬
I mean, what’s a candy thermometer even? Just boil it till it’s a nice brown color, right? I’ve done it and they turned out fine!
I think its too much sugar. I am trying to cut back on sweets but these were hard to resist.
Just made these and they are sooo good! But I think I might add nuts next time. 😍
Not as good as the store-bought ones. Flavor was missing something, maybe more vanilla?
Candy is not as hard as everyone says. You just mix stuff and boil it! Easy peasy!
Mmm, caramel! I like these candies, but they stick to my teeth too much. Maybe I make them too soft? 3/5.
I totally get that! Maybe try cooking it a bit longer next time? That might help it not stick so much! 😊
Rly easy recipe! I couldn’t find a candy thermometer tho. Just eyeballed it and it turned out fine! Thanks!
I’m not good at making candy; maybe I’ll just stick with cookies. 😅
I think we should add nuts maybe? Caramel and nuts go good together!
Nuts would be a great addition! I love the texture they bring. 🌰
I don’t know… adding nuts might mess up the smooth caramel. What if they burn? 🤔
I love caramel! Best treat ever! 🍬
I didn’t have light corn syrup, so I used honey instead. They ended up super sticky! Not what I expected. 2 stars.
These are OK but I prefer store-bought caramel. Less hassle, you know?
I hear ya! Making caramel can be a pain sometimes. But homemade has that fresh taste, ya know?
I don’t know what I did wrong, but mine burned. Maybe my stove is too hot? Disappointed.
I tried these once, and they were gone in a day. SO addictive!
I completely agree! These candies just disappear! I’ve made them twice and everyone loves them!
Addictive? Sure, but I found them way too sweet for my taste. Not sure I’d make them again.
I tried making these, but my mixture crystallized. What did I do wrong? Maybe you need a magic touch? 3 stars for the effort.
These came out perfect! I used to think making caramel was hard, but this recipe is so easy! 😍
I don’t know why my batch turned out rock hard 😢. Followed the recipe exactly.
These turned out amazing! So chewy and delicious!
Just a tip, be careful when boiling the mixture! I almost burned my pan 😅
Thanks for the advice! I really want to try making these, but I’m clumsy in the kitchen 😅.
Uh oh! How did you almost burn it? Did you increase the heat too fast? I’m worried I might mess up too.
Not a fan. They taste way too sweet for me.
Making these for a birthday party, hope everyone likes them!
Sounds delicious! I’m sure they’ll love it! 🍬
I’m not sure about the corn syrup. Don’t you think it’s too sweet?
I’m like the worst cook and even I managed to get these right, thanks for the easy recipe!
Can I use half and half instead of sweetened condensed milk? Asking for a friend!
Half and half? That won’t work! You need the sweetness from condensed milk for it to be caramel! Better stick to the recipe.
It tastes alright, but I got a headache from the sweetness. Too sugary.
These are the best caramels I’ve ever made! So soft and tasty!
I tried this recipe, but my caramels turned out too hard. What did I do wrong?
Just okay. My grandma’s recipe is way better than this one. Sorry! 🙃
I made these for my kids and they just gobbled them up! Super happy with the results! 😄
I think this is too much sugar. Maybe next time I’ll cut back on the brown sugar?
These caramel candies are AMAZING! Melt in your mouth delicious. Will definitely make again!
Great recipe but can someone tell me what ‘firm-ball stage’ means?🤔
This is so simple! My kids loved them. Perfect for Halloween treats! 🍬
I’m so glad your kids loved the caramel candies! They really are a hit for Halloween. 🎃
Seems easy, but I don’t know if my kids will eat something made from corn syrup. 🤔
Honestly, I was skeptical about using corn syrup, but it worked out!
This recipe is like magic! My kids loved helping me make them.
I had a lot of trouble getting the temperature right. My candies turned out kinda sticky and hard to chew.
Wasn’t a fan of how sticky they turned out. I must have done something wrong. 🤔
Maybe you didn’t cook it long enough? The temperature is really key! 🙄
Just a tip, let it cool in the fridge sooner. I had to wait too long! 🤨
IDK why this recipe didn’t work for me. Followed it exactly but my caramel turned into a rock. 🤷♀️
These are amazing! Better than store-bought.
I can’t believe how easy this was! My kids loved them. Definitely making again!
These turned out amazing! Soft and chewy, just how I like them. Thanks for sharing!
I’m so glad you enjoyed them! They are my favorite too!
So good! I added a pinch of sea salt on top and it made them even better! Yum!
I followed the recipe but mine turned out gritty. What did I do wrong?
These turned out amazing! Just the right amount of chewiness. Will definitely make them again!
How do I get them to set properly? I boiled them for too long and they came out hard! Help!
Yummy but sooo much sugar! My dentist is gonna love these 😂. I guess everything is okay in moderation?
I wrapped them in foil instead of wax paper and now they stick together 🤦♂️.
These caramel candies are to die for! I made them for a party, and everyone loved them. 5 stars!
I’m glad to hear they turned out so well! These candies always remind me of my childhood. Can’t wait to try making them myself!
They must be good, but that sounds like way too much sugar. Are you sure it’s not too cloying? Just wondering.
Way too sweet for my taste, I couldn’t finish them. 😝
I totally get it! These candies are super sweet. Maybe you could cut down on the sugar next time? Just an idea! 😊
My kids loved making these with me! So much fun, and they taste great! 😍
Fun, I guess. But isn’t it super sticky? I’d rather just buy some from the store. 😕
That’s awesome! I can’t wait to make these with my kids too! What a great bonding activity! 😄
So easy to make! I added a pinch of sea salt on top. YUM!
My kids loved these! I gave them some for Halloween, and they disappeared in seconds. 🎃
These look sooo good! Can’t wait to try making them! 🥳
These are the BEST caramels! Super soft and chewy, just like I wanted. Will make again for sure!
I tried this recipe but ended up with a hard brick instead of chewy caramels. What did I do wrong? 🤔
I’m so glad you loved them! They’re always a hit at my family gatherings. Just make sure to keep them away from the pets! 🍬
Meh, they are okay. Not what I expected. Maybe caramel isn’t my thing.
I don’t get why people love these. They were too sweet for me and didn’t set properly. Total fail on my end!
I can’t believe how much butter is in this! Isn’t there a healthier option? 🤨
The butter is too much, maybe. Next time I will use less and see what happens.
Y’all, I burnt mine and it’s a sticky mess. Follow the temp carefully!
Hmm… not very caramelly. Liked the idea but not what I expected. 🤷♂️
This recipe is very confusing. Why do you need 2 types of sugar? Seems unnecessary.
Delish! But I added some sea salt on top for that extra zing. Yum!
Really sweet but good!!! I’m never buying caramel candies again!!
