Red, White, and Blueberry Cheesecake Bars

June 26, 2025

Red, white, and blueberry cheesecake bars are the perfect dessert for summer celebrations, especially the Fourth of July, Memorial Day, or any festive gathering. These colorful bars combine a buttery graham cracker crust, a creamy cheesecake filling, and a vibrant topping of fresh strawberries and blueberries. They are sweet, tangy, and absolutely irresistible.

The base of these bars starts with a classic graham cracker crust. Crushed graham crackers are mixed with melted butter and a touch of sugar, then pressed into the bottom of a baking pan to create a crunchy, buttery foundation. This layer adds the perfect contrast to the smooth and rich cheesecake filling that comes next.

The cheesecake layer is made from cream cheese, sugar, eggs, and a splash of vanilla extract. It is velvety, luscious, and lightly sweetened, offering just the right amount of tang to balance the sweetness of the fruit. Once the cheesecake is baked and cooled, it becomes the perfect canvas for the patriotic topping.

Fresh strawberries and blueberries are arranged on top to create that iconic red, white, and blue look. The strawberries bring a juicy sweetness while the blueberries add a pop of tartness. You can lay them out in stripes, create a flag design, or scatter them casually for a rustic, festive appearance.

Not only are these cheesecake bars visually stunning, but they are also easy to slice and serve, making them ideal for backyard barbecues, picnics, or potlucks. They hold up well in warm weather if kept chilled and are always a crowd favorite wherever they go.

Red, white, and blueberry cheesecake bars pair wonderfully with a glass of sparkling wine, lemonade, or a chilled rosé. The bright flavors and creamy texture make them the perfect ending to any summer meal.

Whether you are hosting a party or simply want to make something special, these cheesecake bars deliver on flavor, texture, and presentation. They are festive, refreshing, and guaranteed to be a hit with family and friends.

    2 stars
I dunno, my cheesecake mix was more like soup. Did I do something wrong?

    1. 4 stars
Maybe you didn’t mix it enough? Sometimes the cream cheese needs to be really smooth before adding the eggs. Don’t worry, it happens to the best of us!

    2. 3 stars
Soup? That’s strange, mine came out solid. Did you measure the ingredients right? Especially the eggs and cream cheese?

  6. User avatar amberly.lakin79 says:

    4 stars
So simple and delicious! The combination of berries is perfect.

Easy and tasty! But I used a bigger pan and it got burnt, so caveat emptor!

    1 star
ewwwww, I dont like blueberry lol. Can you make it with just strawberry?

  14. 2 stars
Why is everyone acting like this is some revolutionary recipe? It’s just cheesecake with fruit.

  15. User avatar Rulindil says:

    3 stars
I followed the recipe, but it tasted kinda bland. Maybe add more vanilla?

    1. User avatar morgan.baumbach74 says:

      5 stars
I think that’s a good idea! Sometimes a little extra vanilla can really bring out the flavors. Did you use pure vanilla extract or imitation? Pure is the way to go.

  16. User avatar sandy.cummings30 says:

    3 stars
I think the crust needs more butter. It was too dry for my taste!

    1. 2 stars
But butter is what makes it good! You can’t just take it out! Maybe you did something wrong?

    2. 4 stars
I thought the crust was just right! Maybe try adding some cream or a splash of milk instead of more butter?

  17. User avatar Papahl and family says:

    4 stars
Pretty decent recipe! Maybe I’ll add more strawberries next time for extra flavor.

Yum! Love the fresh berries on top. Perfect for summer!

  34. User avatar rosio.murray2017 says:

    3 stars
Cheesecake is a dessert, but I thought this had too many fruits. Maybe less berries would taste better.

    1. 3 stars
Less berries? I dunno, sounds kinda boring to me. I love the berry explosion! But I guess everyone has their taste. 🤷‍♂️

    2. User avatar florencio.nikolaus1958 says:

      5 stars
I totally disagree! The more fruit, the better! It adds freshness and flavor to the cheesecake! 🍓🍇

  35. User avatar portia.olson89 says:

    2 stars
Is it really necessary to refrigerate for an hour? I mean they’re good warm too right?

    1. User avatar Loonquawl and Phouchg says:

      5 stars
I think it’s best to refrigerate! It helps set the bars properly and they taste even better chilled. Trust me, it’s worth it!

  36. User avatar Uh Shenlong says:

    3 stars
Good, but a little too sweet for my taste. Would reduce the sugar next time. 🍰

  40. User avatar MAGA2024.Trumpster says:

Not bad, but I was expecting more flavor. Where’s the lemon juice? Felt kinda plain.

  41. User avatar elvina.bartoletti37 says:

Mine turned out to be a gooey mess. I must have done something wrong. Gonna stick with my traditional recipes.

I would definitely make this again, but can someone tell me if I can skip the eggs?

  45. User avatar danika.bogisich44 says:

    3 stars
Wait, can you use frozen berries instead? I don’t have fresh ones right now.

  46. 4 stars
Somebody in the comments said to use flavored cream cheese, but that sounds weird. Just stick to the plain stuff. Great recipe!

  47. User avatar Zarniwoop says:

    3 stars
Not bad but some parts tasted plain, maybe add some lemon zest next time?

  49. User avatar Wolf Link says:

  50. User avatar tissues_with_issues says:

    3 stars
Tried it, the taste was ok but it looked nothing like the picture… Disappointing.

  51. User avatar bert.swaniawski50 says:

    1. User avatar seema.smitham32 says:

  54. User avatar dayle.beatty54 says:

  55. User avatar beverlee.cartwright8 says:

    1. User avatar obdulia.leuschke says:

      4 stars
That’s too bad! Cheesecake isn’t for everyone, but these bars look really tasty. Maybe give it a try just to see?

  58. User avatar esther.oberbrunner20 says:

    3 stars
I don’t know, it was kinda bland. I expected more flavor from the berries.

  59. User avatar cherilyn.gusikowski1966 says:

What does ‘almost set’ mean?? Help! I don’t wanna ruin it.

    1. 3 stars
I think ‘almost set’ means it might look a little wobbly, like jelly? Maybe just bake it longer? Just don’t burn it!

    2. User avatar sheree.kohler37 says:

      5 stars
Almost set means it’s not completely firm yet. It’s okay if it jiggles a bit in the middle! Just follow the cooling time after baking, and it should be perfect. 😊

  60. User avatar jeffry.kreiger81 says:

    2 stars
Why do people put strawberries in cheesecake? Gross! Blueberries only for me.

    1. 4 stars
I actually think the strawberries add a nice flavor! You should give it a try sometime!

    2. User avatar Jenell Wisozk IV says:

      5 stars
Strawberries are the best! Blueberries ain’t got nothin’ on them!

  61. User avatar estell.jakubowski75 says:

    5 stars
Easy to make and so tasty! I might add a bit of lemon zest next time.

    1. 3 stars
Not sure about lemon zest… I think it might ruin the flavor! But I’m glad you liked it.

    2. User avatar jonathon.ferry says:

      5 stars
I love the idea of adding lemon zest! It sounds like it would add a nice zing to the cheesecake bars.

  62. User avatar brant.crooks58 says:

    1 star
Why is this called red, white, and blueberry? Shouldn’t it be red, white, and blue? 🤔

    1. User avatar jimmie.dooley2019 says:

      5 stars
I think the name is just playful and highlights the fruit colors! Red strawberries, white cheesecake, and blue blueberries! 🌈

  63. 4 stars
Uhh, it’s cheesecake, so how about you just leave it in the fridge longer? 🤔

  64. 5 stars
These were a huge hit at the BBQ! Everyone loved the combination of flavors! 🍓🍇

  65. 5 stars
This recipe is absolutely divine! I could eat the whole tray myself! 😍
