Ingredients
- 2 cups all-purpose flour sifted
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup butter softened
- 1 cup sugar
- 2 eggs large
- 1 tsp vanilla extract
- 1/2 cup orange juice freshly squeezed
- 1 tbsp orange zest grated
- 1 1/2 cups fresh cranberries washed and dried
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, cream the butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Add the flour mixture to the butter mixture alternately with the orange juice, beginning and ending with the flour. Mix until just combined.
- Fold in the orange zest and cranberries gently.
