Chocolate Lava Cake with Cherries

January 23, 2024

Chocolate lava cake is already a showstopper, but when you add cherries to the mix, it becomes next-level indulgent. The combination of warm, molten chocolate and juicy, slightly tart cherries creates a dessert that feels luxurious but is surprisingly easy to make.

The base of the cake is a simple chocolate batter made with dark chocolate, butter, sugar, eggs, and just a touch of flour. When baked for the right amount of time, the outer layer sets into a soft cake, while the inside remains deliciously gooey, hence the “lava.” The magic happens in the oven, and timing is everything. Pull them out too early, and they collapse. Leave them too long, and you lose that molten center.

The cherry component adds a layer of brightness that cuts through the richness of the chocolate. You can fold chopped cherries into the batter, spoon a cherry compote into the center, or serve the cakes with warm cherries on top. Use fresh cherries if they’re in season, or reach for frozen or jarred sour cherries in syrup during colder months.

These little cakes are baked in ramekins and flipped out onto a plate just before serving. They look elegant but don’t require any complicated techniques, which makes them a great option for a date night, dinner party, or even a cozy night in.

Serve the lava cakes warm with a dusting of powdered sugar, a scoop of vanilla ice cream, or a drizzle of cherry sauce for extra drama. The hot chocolate center will slowly ooze out as you cut in, mixing with the sweet fruit and creating a rich, satisfying bite.

Chocolate and cherries are a timeless pairing, and this dessert celebrates both flavors beautifully. With a soft outer cake, a molten center, and bursts of cherry goodness, chocolate lava cake with cherries is the kind of dessert people remember, and request again and again.

Too much chocolate for me. I prefer vanilla. Does anyone know if you can make this with less chocolate?

You could maybe reduce the chocolate a bit, but it might not be lava cake anymore. But hey, vanilla’s good too!

    1. User avatar anonymous_hacker says:

      3 stars
I thought these cakes cook faster! Mine came out gooey too, but I liked it. Maybe 15 mins just isn’t enough for some ovens?

    2. User avatar dorla.mante29 says:

      4 stars
It sounds like you might have underbaked it! The center should be jiggly, but not raw. Try baking it a bit longer, maybe watch it closely around the 15-minute mark.

  37. 1 star
Boy, this was a flop. Hard as a rock! I guess I forgot some sugar… not for me.

I followed the steps exactly and it flopped on me. What did I do wrong? I think I might give it another try one day.

  42. User avatar aldo.douglas says:

  43. User avatar Hillman Hunter says:

    3 stars
Hmm, not sure about this one. Mine turned out too dense and not really lava-like. Maybe it was my oven? I give it a 3.
