Ingredients
- 1 aubergine large, diced
- 1 can chickpeas drained and rinsed
- 2 tablespoons olive oil

- 1 Lemon juiced
- 2 cloves garlic minced

Instructions
- Preheat the oven to 200°C (400°F).

- Spread the aubergine on a baking tray and roast for 20 minutes or until soft.
