Ingredients
  

  • 2 medium zucchini grated
  • 1/2 cup all-purpose flour
  • 2 large eggs beaten
  • 1/4 cup green onions chopped
  • 1 tsp salt
  • 1 tsp black pepper freshly ground
  • 1/4 cup Parmesan cheese grated
  • 2 tbsp olive oil for frying

Instructions
 

  • Grate the zucchini and squeeze out excess liquid using a clean kitchen towel.
  • In a large bowl, combine the grated zucchini, flour, eggs, green onions, salt, pepper, and Parmesan cheese. Mix until well combined.
  • Heat olive oil in a large skillet over medium heat. Spoon tablespoons of the zucchini mixture into the skillet, flattening them into fritters.
