These crispy and flavorful Zucchini Fritters are a perfect appetizer or side dish that makes the most out of fresh zucchini. Easy to prepare and deliciously seasoned.
Ingredients
- 2 medium zucchini grated
- 1/2 cup all-purpose flour
- 2 large eggs beaten
- 1/4 cup green onions chopped
- 1 tsp salt
- 1 tsp black pepper freshly ground
- 1/4 cup Parmesan cheese grated
- 2 tbsp olive oil for frying
Instructions
- Grate the zucchini and squeeze out excess liquid using a clean kitchen towel.
- In a large bowl, combine the grated zucchini, flour, eggs, green onions, salt, pepper, and Parmesan cheese. Mix until well combined.
- Heat olive oil in a large skillet over medium heat. Spoon tablespoons of the zucchini mixture into the skillet, flattening them into fritters.
- Cook for about 3-4 minutes on each side until golden brown. Transfer to a paper towel-lined plate to drain any excess oil.
- Serve immediately with your choice of dipping sauce.
