Instructions
Grate the zucchini and squeeze out excess liquid using a clean kitchen towel.
In a large bowl, combine the grated zucchini, flour, eggs, green onions, salt, pepper, and Parmesan cheese. Mix until well combined.
Heat olive oil in a large skillet over medium heat. Spoon tablespoons of the zucchini mixture into the skillet, flattening them into fritters.
Cook for about 3-4 minutes on each side until golden brown. Transfer to a paper towel-lined plate to drain any excess oil.
Serve immediately with your choice of dipping sauce.
