This simple and delicious roasted carrots recipe brings out the natural sweetness of the carrots with a hint of garlic and thyme.

Ingredients
  

  • 4 medium carrots peeled and cut into sticks
  • 2 tablespoons olive oil extra virgin
  • 1 teaspoon garlic powder or minced garlic
  • 1 teaspoon thyme dried or fresh
  • to taste salt and pepper

Instructions
 

  • Preheat your oven to 425°F (220°C).
  • In a large bowl, toss the carrot sticks with olive oil, garlic powder, thyme, salt, and pepper until well coated.
  • Spread the carrots in a single layer on a baking sheet.
  • Roast in the preheated oven for 30 minutes, or until the carrots are tender and lightly caramelized, stirring once halfway through.
  • Serve warm as a side dish.
