Instructions
Preheat your oven to 425°F (220°C).
In a large bowl, toss the carrot sticks with olive oil, garlic powder, thyme, salt, and pepper until well coated.
Spread the carrots in a single layer on a baking sheet.
Roast in the preheated oven for 30 minutes, or until the carrots are tender and lightly caramelized, stirring once halfway through.
