Ingredients
  

  • 4 sausages sliced
  • 1 bell pepper diced
  • onion small, chopped
  • 4 Tomatoes chopped
  • 6 eggs beaten
  • 1/2 cup feta cheese crumbled
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions
 

  • Heat olive oil in a large non-stick skillet over medium heat.
  • Add the sausages and cook until browned. Remove from skillet and set aside.
  • In the same skillet, add the bell pepper and onion. Cook until softened.
  • Add the tomatoes and cook for another 2-3 minutes.
  • Pour the beaten eggs into the skillet and mix with the vegetables.
  • Cook for 2-3 minutes or until the eggs are set.
