Heat olive oil in a large non-stick skillet over medium heat.
Add the sausages and cook until browned. Remove from skillet and set aside.
In the same skillet, add the bell pepper and onion. Cook until softened.
Add the tomatoes and cook for another 2-3 minutes.
Pour the beaten eggs into the skillet and mix with the vegetables.
Cook for 2-3 minutes or until the eggs are set.
Sprinkle the feta cheese over the omelette and cook for another minute.
Season with salt and pepper to taste.
Remove from heat and serve hot.
