Roasted potatoes with herbs are a timeless side dish that never goes out of style. Crispy on the outside, soft and fluffy on the inside, and infused with the fragrant flavors of fresh herbs, these potatoes are simple yet incredibly satisfying. They pair perfectly with just about anything, from roasted meats and grilled fish to vegetarian mains and hearty salads.
The key to perfect roasted potatoes is choosing the right variety. Yukon Gold, red potatoes, or baby potatoes work beautifully because they hold their shape while becoming wonderfully tender inside. They are cut into even pieces to ensure they cook evenly and roast up with beautifully golden, crispy edges.
The seasoning is straightforward but full of flavor. A generous drizzle of olive oil helps the potatoes crisp while locking in moisture. Fresh herbs like rosemary, thyme, and parsley combine with minced garlic, salt, and black pepper to create a fragrant and savory coating. As the potatoes roast, the herbs become slightly crispy, releasing their aromatic oils and infusing every bite with earthy, herbal goodness.
Once out of the oven, a sprinkle of flaky sea salt and a final toss with fresh herbs elevates them even more. You can also add a squeeze of lemon for brightness or a dusting of Parmesan cheese for extra flavor.
Roasted potatoes with herbs are incredibly versatile. Serve them alongside roast chicken, steak, salmon, or even eggs for brunch. They also pair beautifully with a crisp green salad or steamed veggies for a lighter meal.
As for drinks, these potatoes go wonderfully with just about anything—white wine, red wine, a cold beer, or sparkling water with herbs like mint or basil.
Simple, rustic, and full of flavor, roasted potatoes with herbs are proof that the best dishes often come from the simplest ingredients. Golden, crispy, and perfectly seasoned, they are a side dish that always steals the show.

These potatoes were amazing! Crispy and full of flavor. Family loved them.
Potato heaven! ✨🥔
Yum! Perfect side dish! I usually make mashed potatoes, but this was a nice change.
These potatoes were AMAZING! So crispy and the herbs gave them so much flavor. Definitely a new favorite!
I don’t know… mine turned out kinda soggy. Maybe I did something wrong? 🤔
I agree! These are the best! I made them for my family and they couldn’t get enough. 🤤
I don’t get why it says to roast for 30 mins, mine took almost an hour! Still, they were good.
These potatoes turned out amazing! So crispy and full of flavor. Will definitely make again!
These potatoes were amazing! I added garlic powder for a little kick and my family devoured them. Definitely a 5!
I’m so glad you liked them! Garlic powder is a great idea. I might try that next time!
Simple and quick! My kids loved it. I added some garlic powder for extra flavor too.
So simple but I didn’t have olive oil, used butter instead. Still tasted good! 4 stars.
Eh, it was okay. I thought it would be more exciting with the herbs.
How long you gotta roast em? I left mine in too long and they burnt. Smelled good tho.
Usually, about 30 minutes should do it! Just keep an eye on them after 25 minutes, they’re easy to burn!
Too much rosemary for me. I think next time I’ll use less and add some paprika instead.
Potatoes are potatoes, how can you mess this up? Lol. I just boiled mine.
Tried making this, but they turned out mushy… Is there a trick to keeping them crispy?
Love roastin’ potatoes! Just like my grandma used to make. Instant classic!
They look okay, but my mom’s recipe has more spices. You think these would taste better with garlic?
I totally agree! Nothing beats that comforting taste of grandma’s cooking. These roasted potatoes are a perfect tribute!
Potatoes? Herb? Why bother? Just boil them.
These potatoes were amazing! So crispy and flavorful! Will definitely make again.
I’m so glad you loved them! I tried your method and it turned out perfect too! Thanks for sharing!
These potatoes better not be soggy! What if my oven ain’t working right? I’m nervous 😬.
I tried this recipe but somehow I burned them. Does anyone else have this issue? Or am I just terrible in the kitchen?
I tried this recipe but my potatoes turned out mushy. I think I overcooked them. Any tips for next time?
I tried this recipe but added some garlic powder. Major improvement! 😍
Garlic powder sounds like a great idea! I’m def trying that next time! 😋
But garlic powder isn’t supposed to be part of the recipe… Why mess with it?
I’m going to try this for dinner
Yummm!! I replaced rosemary with parsley, tasted great! 👌
Super easy to make. Just tossed everything in, and they turned out crispy and flavorful! Will definitely do again.
These are good potatoes but I’ve had better. Too much thyme maybe.
I find this recipe way too basic. Should’ve added some cheese or bacon for more richness!
Great recipe! Did you know that potatoes can make you fat? But these are worth it lol.
These potatoes were so good! Perfectly crispy and flavorful. Definitely making them again!
Not bad, but I think I messed up the measurements. Too much salt!
Potatoes are potatoes, you know? Didn’t see what the big deal was with the herbs.
These potatoes turned out amazing! So crispy and flavorful. Will make again!
I love thyme! These potatoes were a hit at my BBQ. Everyone asked for the recipe. 5 stars! Yay!
Yay! Love hearing that! Thyme really makes everything better. Gonna try this at my next BBQ for sure!
Looks delish. Havent tried yet but will let ya know how it goes.
Yummy! Dnt forget to turn them!! Very good with steak. 😊
Too much rosemary for my taste. I almost choked on it! I’ll stick to plain potatoes next time.
I think the rosemary adds a nice flavor! Maybe just use less next time? 🤔
Plain potatoes are boring! You should give it another try with less herbs. It’s about finding the right balance!
These roasted potatoes were so good! Made them for dinner and my family loved them.
Pretty simple recipe! I added garlic too, it was a hit! My kids gobbled them up. Thumbs up!
I don’t get the fuss about roasted potatoes. They were pretty bland to me. 👎
Potatoes ayo but where’s the meat? Just sayin’!
I didn’t have any herbs, just salt and pepper. I guess they were okay but wouldn’t call ’em roasted potatoes. 3 stars.
Tried this recipe but my potatoes ended up squishy. Maybe I didn’t cook them long enough or used wrong potatoes? Not sure.
Is this really 500 grams? I just used whatever I had and they turned out ok I guess.
I think these were good but not great. I might try adding garlic next time. Anyone else try that?
Garlic sounds like a great idea! I always add it to roasted potatoes, really boosts the flavor. Try it out!
Wait, does 200°C mean a high oven? Someone help me out here! 🔥
This is the easiest recipe ever! I made it for my family and they loved it! Will make again!
Super easy! My kids loved them, even my picky eater. Thanks for sharing! 😊
Meh, I expected better. They were just alright. Maybe I’m picky, but I wouldn’t make them again. 2 stars.
I used sweet potatoes instead. This recipe still worked but didn’t taste as good. Should’ve gone classic.
Who even likes sweet potatoes anyway? Potatoes are the way to go! 🤷♂️
Sweet potatoes are great, but yeah, the classic ones really hit different! Better luck next time!
I might add garlic next time. Just a suggestion. Anyone tried that?
What if I don’t have rosemary? Can I use something else? 🤔
You can use oregano or sage instead! They both work pretty well with potatoes. 😊
I dunno, just leave it out! Potatoes are good on their own. 😜
Didn’t have thyme so I used basil. Still went well. Potatoes are potatos, right? 🙂
