Ingredients
- 2 sweet potatoes peeled and diced, large
- 1 tbsp olive oil
- 1 onion chopped
- 3 cloves garlic minced
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- 1 red bell pepper chopped
- 2 cans black beans rinsed and drained
- 1 can diced tomatoes
- 2 cups vegetable broth
- 1 tsp salt or to taste
- cilantro for garnish, fresh
