A refreshing and healthy salad with cucumber and mint.
Ingredients
- 2 cucumbers
- 1/4 cup fresh mint leaves
- 2 tbsp lemon juice
- 1 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Peel and slice the cucumbers.
- Chop the mint leaves.
- In a bowl, combine the cucumbers, mint leaves, lemon juice, and olive oil.
- Season with salt and pepper to taste.
- Toss well to coat everything in the dressing.
- Serve the salad chilled.
