Ingredients
  

  • 2 cucumbers
  • 1/4 cup mint leaves fresh
  • 2 tbsp lemon juice
  • 1 tbsp extra-virgin olive oil
  • Salt and pepper to taste

Instructions
 

  • Peel and slice the cucumbers.
  • Chop the mint leaves.
  • In a bowl, combine the cucumbers, mint leaves, lemon juice, and olive oil.
  • Season with salt and pepper to taste.
  • Toss well to coat everything in the dressing.
  • Serve the salad chilled.
