A delicious and hearty breakfast skillet with beef and veggies, seasoned with souvlaki spices.

Ingredients
  

  • 1 pound beef sirloin cut into bite-sized pieces
  • 1 onion sliced
  • 1 red bell pepper sliced
  • 1 zucchini sliced
  • 1 tbsp olive oil
  • 2 tbsp souvlaki seasoning
  • Salt and pepper to taste
  • 4 eggs

Instructions
 

  • In a large skillet, heat olive oil over medium heat.
  • Add beef sirloin and cook until browned, about 6-8 minutes.
  • Remove beef from skillet and set aside.
  • In the same skillet, add onion, bell pepper, and zucchini.
  • Cook until vegetables are tender, about 5-6 minutes.
  • Add souvlaki seasoning, salt, and pepper to the skillet and stir to coat the vegetables.
  • Return the beef to the skillet and mix well with the vegetables.
  • Create four wells in the mixture and crack an egg into each well.
  • Cover the skillet and cook until the eggs are cooked to your liking, about 4-5 minutes for medium runny yolks.
  • Serve the Souvlaki Breakfast Skillet hot and enjoy!

      Yes, you can definitely use chicken! Just make sure to adjust the cooking time since chicken might cook a bit differently than beef. You can marinate it with the souvlaki seasoning too for extra flavor!

      I had the same issue with the eggs! They were way too firm for my taste. Maybe next time try cutting down the cooking time like you said. Hope it helps!

      Nah, I think it’s just how it is. Souvlaki is supposed to have a bit of grease. Just drain some off if you think it’s too much. πŸ₯΄
