Ingredients
  

  • 1 pound beef sirloin cut into bite-sized pieces
  • 1 onion sliced
  • 1 red bell pepper sliced
  • 1 zucchini sliced
  • 1 tbsp olive oil
  • 2 tbsp souvlaki seasoning
  • Salt and pepper to taste
  • 4 eggs

Instructions
 

  • In a large skillet, heat olive oil over medium heat.
  • Add beef sirloin and cook until browned, about 6-8 minutes.
  • Remove beef from skillet and set aside.
  • In the same skillet, add onion, bell pepper, and zucchini.
  • Cook until vegetables are tender, about 5-6 minutes.
  • Add souvlaki seasoning, salt, and pepper to the skillet and stir to coat the vegetables.
  • Return the beef to the skillet and mix well with the vegetables.
  • Create four wells in the mixture and crack an egg into each well.
  • Cover the skillet and cook until the eggs are cooked to your liking, about 4-5 minutes for medium runny yolks.
