  • 1 teaspoon almond extract

  • 2 2/3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • Green food coloring green food coloring as desired
  • 1/2 cup whole almonds for fingernails

Instructions
 

  • Preheat oven to 325°F (165°C). Line a baking sheet with parchment paper.
  • In a large bowl, beat the butter, powdered sugar, almond extract, and vanilla extract together until smooth.
  • Mix in the egg, then gradually add the flour, baking powder, and salt. Blend until you have a smooth dough.
  • Add green food coloring to the dough, mixing until the color is evenly distributed.
  • Take heaping tablespoons of dough, shape into long fingers, and press one almond into the end of each to create a ‘fingernail.’
  • Arrange the finger cookies on the prepared baking sheet and repeat with remaining dough.
  • Bake in the preheated oven for 20-25 minutes until lightly golden and firm.
  • Allow to cool on baking sheet before transferring to a wire rack.
