A delicious and healthy grilled salmon dish with Mediterranean flavors.

Ingredients
  

  • 2 salmon fillets
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/2 tsp thyme dried
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 Lemon sliced
  • 1/4 cup black olives pitted and sliced
  • 1/4 cup sun-dried tomatoes chopped
  • 1/4 cup feta cheese crumbled
  • parsley chopped, for garnish, fresh

Instructions
 

  • Preheat grill to medium heat.
  • In a small bowl, combine olive oil, minced garlic, dried oregano, dried basil, dried thyme, salt, and black pepper.
  • Brush the marinade mixture on both sides of the salmon fillets.
  • Place the lemon slices on top of the salmon fillets.
  • Grill the salmon for about 6-8 minutes per side, or until cooked through.
  • Meanwhile, in a small bowl, combine the black olives, sun-dried tomatoes, and crumbled feta cheese.
  • Remove the salmon from the grill and top with the olive, tomato, and feta mixture.
  • Garnish with fresh parsley and serve.
  • Enjoy!

      Sun-dried tomatoes are just dried tomatoes! They kinda taste sweet and tangy, way better than ketchup! You should try it!

    Easy to make, but I think my grill was too hot. Burned part of it, oops!

      Yeah, grilling can be tricky! Try turning down the heat next time. The salmon is still gonna taste good, even if it’s a bit charred. Don’t sweat it! 😅

    I didn’t have feta, so I used cheddar instead. It was alright, but not the same. Maybe I’ll try again with the right cheese.
