Swiss steak is one of those timeless comfort foods that brings big flavor with minimal effort. This quick-simmered skillet version speeds up the traditional method without sacrificing tenderness or taste. It’s the kind of meal that feels like it’s been slow-cooked all day, even though it’s on the table in under an hour.
At its core, Swiss steak is about transforming a budget-friendly cut of beef into something tender and full of flavor. Typically made with round steak or another lean cut, the meat is lightly coated in flour, then browned in a skillet to lock in flavor. From there, it’s simmered in a tomato-based sauce with onions, garlic, and a few pantry spices until fork-tender.
This quick version keeps everything simple. After browning the steak, you’ll deglaze the pan with crushed tomatoes or tomato sauce, add a splash of broth for depth, and let the mixture simmer gently until the meat becomes tender and the flavors meld. A bit of Worcestershire sauce or balsamic vinegar can add a subtle tang that balances the richness.
Serve it over mashed potatoes, rice, or egg noodles to soak up the flavorful sauce, and pair it with a simple green vegetable like steamed broccoli or sautéed green beans. It’s a great meal for chilly evenings or whenever you’re craving a homestyle dish that doesn’t take all day.
Swiss steak is also a great make-ahead option. Like many braised dishes, the flavor improves as it sits, so feel free to prepare it in advance and reheat when you’re ready to serve. It also freezes well, making it a smart addition to your meal prep rotation.
Whether you’re cooking for your family or just want a cozy meal with minimal fuss, this quick-simmered skillet Swiss steak hits all the right notes. It’s hearty, comforting, and satisfying, the kind of dinner that feels like a hug on a plate.

- 1/4 cup all-purpose flour
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp vegetable oil
- 1 onion large, sliced
- 1 green bell pepper sliced
- 2 cloves garlic minced
- 1 can diced tomatoes 14 oz
- 1 can Tomato sauce 8 ounces
- 1 tbsp Worcestershire sauce
- 1/2 tsp thyme dried
- 1/2 tsp dried basil
- 1/4 tsp dried oregano
- 1/4 cup parsley chopped fresh
Instructions
- Cut beef into serving-sized pieces.
- In a shallow dish, combine flour, salt, and black pepper. Dredge the beef pieces in the flour mixture, shaking off any excess.
- In a large skillet, heat oil over medium heat. Add the beef pieces and brown on both sides. Remove the beef from the skillet and set aside.

- Add the diced tomatoes, tomato sauce, Worcestershire sauce, thyme, basil, and oregano to the skillet. Stir to combine.
- Return the beef to the skillet and bring to a simmer. Cover and cook for 1 hour, or until the beef is tender.
- Sprinkle with chopped parsley before serving.
Made it last night! Family loved it! Will make again! 👍
Quick and easy, but it felt like it needed more seasoning. Maybe add some chili flakes for kick?
Yum!! So juicy and tender. Best recipe I’ve tried in a while! 🥩❤️
This Swiss steak is amazing! I served it to my family and they loved it. So tender and flavorful! Definitely a keeper! 👍
Wow, only 6 ingredients? I thought Swiss steak had cheese or somethin’!
Yeah, I thought it had cheese too! But I guess this is a different take. Looks good anyway!
Made this for company and they loved it! Will definitely share this recipe!
I don’t know about the flour part. Could it be skipped? My steak turned out kinda soggy.
This swiss steak was amazing! My family loved it. Will make again!
So glad to hear you loved it! Swiss steak is such a comfort dish. Definitely going to try it this weekend!
I don’t know about this recipe. It sounds kinda bland without seasoning.
This recipe is easy. My 12-year-old made it while I supervised! Came out well!
Wow, that’s awesome! It’s great to see kids cooking. What did your kid think of the steak?
Meh. Just ok. Nothing special, tasted like every other steak recipe I’ve tried.
Took me an hour to cook instead of 1 hr despite following the recipe! What’s up with that?
This recipe is super easy and delicious! The flavor was just right.
This looks absolutely delicious! Can’t wait to try it! 😍
Quick and easy, just how I like it! I used chicken instead of beef and it still turned out great! Just be sure to adjust the cook time. 😄
Not sure why my meat was tough. Did I cook it too long? 🤔
My grandma made Swiss steak way different! But I’ll give this a shot.
It seems way too simple for Swiss steak. I doubt it’ll be that good.
Why would anyone put Worcestershire sauce in a steak dish? That stuff is weird. I left it out and it was still okay, but not great.
No way, sauce is saucy! My grandma used to say that it makes the beef juicier. Plus, it ain’t weird, just adds flavor. You should give it another shot!
I actually love Worcestershire sauce in my steak dishes! It gives a depth of flavor that’s hard to beat. You might want to try it next time!
I can’t believe how simple this was. Even my kids loved it!
Cooking is fun! I added mushrooms too. Yum! 10/10 for me.
Mushrooms sound like a great addition! I might try that next time too. Glad you enjoyed it! Keep having fun in the kitchen! 😊
I don’t get why people like this recipe. My steak was tough and greasy. Maybe I did something wrong? 🤔
Why would you use green pepper? Red is way better. This recipe needs a redo.
I think green pepper adds a nice crunch and flavor, but I get it if you prefer red. Everyone has their taste!
I tried making this but forgot the Worcestershire sauce. It was kinda bland. Gotta give it another shot!
Easy to follow! Just a bit too much tomato for my taste. Next time, I’ll cut back.
Quick and easy, but I wish it had more spice options. Just felt kinda bland.
I substituted chicken for beef cause I’m a vegetarian. It was okay.
Ugh, so much chopping! I need an easier recipe next time. 😩
I love Swiss steak but this recipe sucks. I don’t recommend it.
I’m sorry you didn’t like it! Maybe try adjusting the spices or cooking time? It’s a classic for a reason!
Yum! I love it! My friends were impressed and it was super easy to make. I’m gonna make it again next week for sure.
Bro, that was bomb! Will make again ASAP.
So glad you loved it! It’s a keeper for sure! 😊
Yummy! I added some mushrooms and it was fantastic!
I don’t know, it didn’t turn out like I expected. The beef was too tough.
Hmm, seems like you might be doing it wrong. The recipe says simmer for an hour, that’s how you get it soft, right?
Sorry to hear that! Maybe try cooking it a bit longer next time? It could help the beef get more tender.
It’s good but I added some chili powder for a kick. Really brought it up a notch!
Chili powder? That sounds interesting! I’m definitely going to try that next time. 🌶️
Why is there tomato sauce AND diced tomatoes? Seems kinda redundant.
So good! Even my picky eater boyfriend loved it! Will be making again!
That’s awesome to hear! My kids are picky too, so I’m def gonna try this! Thanks for sharing!
Sounds good but I don’t know… can it really please a picky eater? My boyfriend just eats pizza all the time.
Yum! Parsley makes everything better! 🌿
The cook time seems long! Is it really necessary to simmer for an hour? 🤔
Um, can you use chicken instead of beef? Asking for a friend. 😂
This is just another meat stew, nothing special. 😒
I disagree! This recipe looks hearty and packed with flavor. Perfect comfort food for chilly evenings! 🍽️
Kinda skeptical about the Worcestershire sauce. What’s that, anyway? Lol.
This steak was super easy to make! My family devoured it. Will make again!
Looks easy, but are you sure it was that great? My steak always comes out tough. What’s your secret?
Glad to hear it! This is actually a favorite in my house too. What sides did you serve with it?
Great recipe! I served it with mashed potatoes, and my family loved it. Thanks for sharing!
Not really my thing. I think Swiss steak should be grilled, not simmered. Disappointed.
This was amazing! The beef was so tender, and the flavors were on point. Definitely a keeper!
I’m glad you loved it! I made this last week, and it was a hit at my family dinner too! 👍
Really? I tried it and it turned out too chewy for me. Maybe I cooked it too long? 🤔
Took forever to cook. I thought it was supposed to be quick-simmered! Needs a new name.
