Quick-Simmered Skillet Swiss Steak

April 12, 2024

Swiss steak is one of those timeless comfort foods that brings big flavor with minimal effort. This quick-simmered skillet version speeds up the traditional method without sacrificing tenderness or taste. It’s the kind of meal that feels like it’s been slow-cooked all day, even though it’s on the table in under an hour.

At its core, Swiss steak is about transforming a budget-friendly cut of beef into something tender and full of flavor. Typically made with round steak or another lean cut, the meat is lightly coated in flour, then browned in a skillet to lock in flavor. From there, it’s simmered in a tomato-based sauce with onions, garlic, and a few pantry spices until fork-tender.

This quick version keeps everything simple. After browning the steak, you’ll deglaze the pan with crushed tomatoes or tomato sauce, add a splash of broth for depth, and let the mixture simmer gently until the meat becomes tender and the flavors meld. A bit of Worcestershire sauce or balsamic vinegar can add a subtle tang that balances the richness.

Serve it over mashed potatoes, rice, or egg noodles to soak up the flavorful sauce, and pair it with a simple green vegetable like steamed broccoli or sautéed green beans. It’s a great meal for chilly evenings or whenever you’re craving a homestyle dish that doesn’t take all day.

Swiss steak is also a great make-ahead option. Like many braised dishes, the flavor improves as it sits, so feel free to prepare it in advance and reheat when you’re ready to serve. It also freezes well, making it a smart addition to your meal prep rotation.

Whether you’re cooking for your family or just want a cozy meal with minimal fuss, this quick-simmered skillet Swiss steak hits all the right notes. It’s hearty, comforting, and satisfying, the kind of dinner that feels like a hug on a plate.

It seems way too simple for Swiss steak. I doubt it’ll be that good.

Why would anyone put Worcestershire sauce in a steak dish? That stuff is weird. I left it out and it was still okay, but not great.

    1. 4 stars
No way, sauce is saucy! My grandma used to say that it makes the beef juicier. Plus, it ain’t weird, just adds flavor. You should give it another shot!

I don’t get why people like this recipe. My steak was tough and greasy. Maybe I did something wrong? 🤔

  23. 2 stars
Why would you use green pepper? Red is way better. This recipe needs a redo.

    1. User avatar sammie.beier says:

      4 stars
I think green pepper adds a nice crunch and flavor, but I get it if you prefer red. Everyone has their taste!

    1. User avatar renee.spinka2021 says:

Hmm, seems like you might be doing it wrong. The recipe says simmer for an hour, that’s how you get it soft, right?

    2. User avatar Deep Thought says:

      4 stars
Sorry to hear that! Maybe try cooking it a bit longer next time? It could help the beef get more tender.
