Asparagus and pea salad with mint is a refreshing and light dish that celebrates the best of spring’s seasonal produce. The tender asparagus and sweet peas pair beautifully, creating a crisp, vibrant base, while the fresh mint adds a burst of aromatic flavor that elevates the entire salad. With a simple, zesty dressing, this salad is perfect for any occasion, from a light lunch to a side dish at a summer gathering.
The asparagus is lightly blanched, preserving its vibrant green color and maintaining a slight crunch. The peas, whether fresh or frozen, add a touch of sweetness that complements the earthiness of the asparagus. Together, they form a harmonious balance of flavors and textures. The mint, which is finely chopped, provides a refreshing contrast, offering a cool, aromatic kick that brings out the freshness of the vegetables.
The dressing for this salad is equally simple but incredibly flavorful. A mix of olive oil, lemon juice, and a touch of honey or Dijon mustard creates a tangy yet smooth base. The acidity from the lemon juice balances the richness of the olive oil, while a drizzle of honey or mustard can add a hint of sweetness or spice, depending on your preference. A pinch of salt and pepper ties the dressing together and enhances the natural flavors of the vegetables.
For added depth, you can sprinkle the salad with toasted nuts like almonds or pine nuts, which offer a satisfying crunch and a nutty flavor. A sprinkle of feta cheese or goat cheese can also provide a creamy, salty contrast that complements the fresh vegetables.
Asparagus and pea salad with mint is a versatile dish that can be enjoyed on its own or as a refreshing side dish alongside grilled meats, fish, or a light pasta. Whether served chilled or at room temperature, it’s a perfect choice for warm-weather meals, offering a burst of flavor and color with every bite.

Ok salad, but not filling enough for me. Needs some chicken or something.
Wait, are peas and asparagus green? I thought I was getting a salad with somethin’ meaty in it… Disappointing.
Super easy to make! I used frozen peas and it worked just fine. Perfect for summer BBQs!
This salad is a great way to use up veggies. I added some feta cheese too. So good!
This salad is sooo fresh! Perfect for summer days. I love the mint!
Why do you need ice water? Seems excessive. Just cool it in the fridge.
Cooling it in the fridge may take too long! Ice water stops the cooking right away, keeping that bright color and crunch. It’s not excessive, just better technique!
Super easy to make! I added some feta cheese and it was awesome! 🌟
This salad is super refreshing! I used lime instead of lemon and it was still amazing. Thanks for the recipe!
I don’t understand why you put peas in a salad. Just not right. 😕
I think peas add a nice sweetness to the salad! Give it a chance! 🌱
Great for summer BBQs! Light and refreshing! 🌞
Why do you put ice water? Isn’t it a waste? Lol. I just skipped that part.
Wasn’t really a fan. The asparagus was too crunchy for me. Didn’t enjoy this at all.
I didn’t have fresh mint, so I used dried. The flavor wasn’t the same. Disappointed.
Took too long to prep. I like simple. Maybe just steam the asparagus next time.
Asparagus?? I thought it was a type of broccoli. Makes sense now, haha!
Haha, right? It’s crazy how similar they look! But asparagus is way tastier, in my opinion. 🤤
Not bad, but I thought it would have more flavor. Maybe add some garlic next time?
Garlic would def make it pop! I love that flavor. Giving it a try next time for sure.
I don’t know about this… peas and asparagus? Sounds weird. 🤔
Very light and refreshing. I added some feta cheese for a little extra flavor. Will make again!
My partner loved it, said it reminded them of summer! 🌞
Eww! Not my thing, I would rather have fries. 🍟
Why did I add too much lemon juice? Ruined it for me. 😩
This salad is amazing! The mint really freshens it up. My new favorite dish!
Asparagus gives me gas, but I’ll give this a shot for my friends. Hope they like it!
I tried this but used canned peas and it was kinda mushy. Not the same vibe 😕.
Super easy and healthy! I cooked my asparagus for too long though… oops 😅
Yum! Fresh and light. Perfect for summer barbecues. Thumbs up from me! 👍
Not sure about the mint… it was kind of weird with the veggies. Maybe I did it wrong?
Mint with veggies? That’s weird! But maybe ur taste is just different. I’ve never thought of that combo.
I think the mint pairs well with the veggies! It adds a fresh flavor. Maybe try less mint next time?
My kids loved it! Easy to make and super healthy. Will make again!
I like peas but not fans of asparagus… Can I swap for broccoli? 🤷♂️
Broccoli would work, but the flavor will be different! 🤔
Why not just try it? Broccoli is yummy too! 👍
Really? People eat peas in salads? Never thought I’d try this but I kinda liked it.
Ain’t no way I’m eating cold veggies! Cook them more! 😂
This salad was amazing! The mint really brightens everything up. Will make again!
So glad you liked it! Mint does wonders for the flavor! 🍃
I dunno, mint in salads? Sounds weird to me. I prefer it in desserts.
I love the mint in this, really gives it a pop. Will make it again for my picnic!
I tried it with basil instead of mint once, and it turned out weird. Mint really is the way to go! Enjoy your picnic!
Mint? Really? I dunno, feels like overkill to me. Don’t think my family will like it.
This salad is amazing! The mint gives it such a fresh taste. 🌱
Easy to make but I didn’t really like the combination. Asparagus tastes weird to me.
I don’t like peas!!! 😩 Can I just leave them out?
Mint? In a salad? No thanks! I think that’s a weird idea.
I love mint in salads! It adds a fresh taste. You should give it a try!
It was okay, but I think I overcooked the asparagus. Next time I’ll watch it more careful.
Great salad! I served it with grilled chicken and it was perfect. Totally gonna be a regular dish.
Looks good, but asparagus is weird. Why would you boil it? Doesn’t it taste better grilled? 🤔
I also love this salad! The combo of mint and lemon is so refreshing. Grilled chicken is a great idea. 😋
This salad is sooo fresh and delicious! Loved the mint!
I agree, the mint really adds a great flavor! It’s my go-to for salads now.
I did not have mint so I used basil instead. It worked out fine, but I bet mint is better.
Simple and tasty! Perfect for summer gatherings. 🍽️
