Asparagus and Pea Salad with Mint

April 14, 2025

Asparagus and pea salad with mint is a refreshing and light dish that celebrates the best of spring’s seasonal produce. The tender asparagus and sweet peas pair beautifully, creating a crisp, vibrant base, while the fresh mint adds a burst of aromatic flavor that elevates the entire salad. With a simple, zesty dressing, this salad is perfect for any occasion, from a light lunch to a side dish at a summer gathering.

The asparagus is lightly blanched, preserving its vibrant green color and maintaining a slight crunch. The peas, whether fresh or frozen, add a touch of sweetness that complements the earthiness of the asparagus. Together, they form a harmonious balance of flavors and textures. The mint, which is finely chopped, provides a refreshing contrast, offering a cool, aromatic kick that brings out the freshness of the vegetables.

The dressing for this salad is equally simple but incredibly flavorful. A mix of olive oil, lemon juice, and a touch of honey or Dijon mustard creates a tangy yet smooth base. The acidity from the lemon juice balances the richness of the olive oil, while a drizzle of honey or mustard can add a hint of sweetness or spice, depending on your preference. A pinch of salt and pepper ties the dressing together and enhances the natural flavors of the vegetables.

For added depth, you can sprinkle the salad with toasted nuts like almonds or pine nuts, which offer a satisfying crunch and a nutty flavor. A sprinkle of feta cheese or goat cheese can also provide a creamy, salty contrast that complements the fresh vegetables.

Asparagus and pea salad with mint is a versatile dish that can be enjoyed on its own or as a refreshing side dish alongside grilled meats, fish, or a light pasta. Whether served chilled or at room temperature, it’s a perfect choice for warm-weather meals, offering a burst of flavor and color with every bite.

Why do you need ice water? Seems excessive. Just cool it in the fridge.

    1. 5 stars
Cooling it in the fridge may take too long! Ice water stops the cooking right away, keeping that bright color and crunch. It’s not excessive, just better technique!

  7. 4 stars
Super easy to make! I added some feta cheese and it was awesome! 🌟
