A refreshing and easy pasta salad perfect for hot summer days. Packed with fresh vegetables, tender pasta, and a tangy vinaigrette.
Ingredients
- 200 g pasta (such as rotini or penne)
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, thinly sliced
- 1 cup bell pepper, diced
- 1/4 cup black olives, sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 tsp dried oregano
- 1/2 tsp salt to taste
- 1/4 tsp black pepper to taste
Instructions
- Cook the pasta according to the package instructions until al dente. Drain and rinse with cold water to cool.
- In a large bowl, combine the cherry tomatoes, cucumber, red onion, bell pepper, black olives, and feta cheese.
- In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and black pepper.
- Add the cooled pasta to the bowl with the vegetables and pour the dressing over. Toss to combine.
- Serve immediately or refrigerate for up to 2 hours before serving.
