Mom’s Meatloaf

September 4, 2024

There’s something incredibly nostalgic and comforting about Mom’s Meatloaf. This classic dish has been a staple in family kitchens for generations, offering a hearty and satisfying meal that brings everyone together. Made with ground beef, breadcrumbs, and a blend of savory seasonings, Mom’s Meatloaf is tender, flavorful, and topped with a delicious glaze that caramelizes as it bakes. Whether it’s a busy weeknight or a Sunday family dinner, this meatloaf is the ultimate comfort food.

The base of Mom’s Meatloaf starts with ground beef, which provides the rich, savory foundation for the dish. Breadcrumbs are mixed in to help keep the meatloaf moist and tender, while eggs bind everything together. The seasoning mix often includes onions, garlic, salt, pepper, and a splash of Worcestershire sauce, creating a well-balanced flavor profile that’s comforting and familiar. Some variations might include grated cheese or finely chopped vegetables for added texture and flavor.

The meat mixture is shaped into a loaf and topped with a glaze made from ketchup, brown sugar, and a touch of mustard. This glaze is spread over the meatloaf before baking, creating a sweet and tangy crust that adds a perfect balance to the savory interior. As the meatloaf bakes, the glaze caramelizes, giving each slice a deliciously flavorful finish.

Mom’s Meatloaf is incredibly versatile and easy to customize. You can swap out the ground beef for ground turkey or chicken for a lighter version, or add herbs and spices like thyme or parsley for a more aromatic touch. For an extra layer of flavor, try serving the meatloaf with mashed potatoes and roasted vegetables, or pair it with a simple green salad.

This dish is perfect for meal prepping, as leftovers are just as delicious, if not better, the next day. Whether you’re making it for the family or sharing it with friends, Mom’s Meatloaf is a timeless classic that never fails to satisfy.

I was skeptical about using saltines, but wow. Also, 1 hour 20 min at 350 worked great for my pan size. Super easy.

The bell pepper amount seems random? Like 1/4 cup is not enough to taste. But I guess it adds sweetness. I dunno.

I don’t see how just a few saltines can hold this together. Seems weird.

I messed up and put too much sugar. Gross! Never again.

Ketchup on top is… controversial? But honestly it caramelized a little and made a nice crust. I’m converted.

Meatloaf is supposed to be with breadcrumbs, not saltines!!! Just saying.

I think saltines can add a nice texture! But yeah, traditional recipes often use breadcrumbs. It’s all about what you like! 😄

Honestly, I don’t get the hype around meatloaf. This one was okay, but I’ve had better. Just my opinion!

Meatloaf is an art! You just haven’t found the right one yet. Try adding some spices next time, it could change everything!

Nah, meatloaf is what it is. It’s not exciting but it hits the spot sometimes. Just don’t expect it to be gourmet!

Not sure about the hot sauce dash—like, I couldn’t taste it at all. Might be my hot sauce was too mild? Still tasted okay though.
