    I followed the steps exactly, but the texture was weirdly thick at first. I ended up loosening it with a splash of pasta water and it was fine. Still solid.

      Totally agree—mine was a little flat too. I ended up adding more salt and a tiny bit of garlic (powder) and it perked up a lot. Also I skip the cold-water rinse usually; if you want it creamier, just drain well and let it cool.

      Totally get what you mean—mashed avocado does end up kind of like guac dressed pasta. If you want it more “classic,” Greek yogurt would probably make it tangier and smoother. You could swap part of the avocado for yogurt (or add a spoon or two to the mix) and adjust lime/salt to taste.
