Baked Banana-Nut Oatmeal Cookies

April 3, 2024

If you’re craving a wholesome snack that’s both satisfying and delicious, these baked banana-nut oatmeal cookies are the perfect solution. Made with ripe bananas, hearty oats, and crunchy nuts, they’re a great way to indulge your sweet tooth while keeping things nutritious.

The beauty of these cookies lies in their simplicity. Start by mashing up ripe bananas, which provide natural sweetness and moisture without the need for added sugar. Mix in rolled oats for that hearty, chewy texture, and add a handful of your favorite nuts, such as walnuts, almonds, or pecans. These nuts not only add a satisfying crunch but also contribute healthy fats and protein.

To flavor the dough, sprinkle in some cinnamon and vanilla extract. The warm spices balance the natural sweetness of the bananas and oats, creating a comforting flavor that’s perfect for any time of day. A pinch of salt helps to enhance the overall taste, and a little honey or maple syrup can be added if you like your cookies on the sweeter side.

Once you’ve mixed the ingredients together, simply scoop spoonfuls of dough onto a baking sheet lined with parchment paper, spacing them out to allow for slight spreading. Flatten them gently with the back of a spoon to get that classic cookie shape. Bake at 350°F (175°C) for about 12-15 minutes, or until they’re golden brown around the edges.

These cookies come out soft and chewy, with just the right amount of crispness on the outside. They make a great breakfast on-the-go, a midday snack, or a healthy dessert when you’re craving something sweet but don’t want to overindulge. Plus, they store well in an airtight container for several days, making them a great option for meal prepping.

Baked banana-nut oatmeal cookies are a simple and tasty treat that’s perfect for anyone looking for a healthy, satisfying bite. Full of flavor and packed with nutrients, they’re the ideal choice for your next snack or breakfast treat.

I dunno about walnuts. What if I just substitute them with peanuts?

    1. User avatar shan.greenholt says:

      4 stars
Peanuts might work, but they definitely gonna change the flavor! Walnuts are more nutty. Just a thought.

    1. User avatar marianne.krajcik says:

      2 stars
I don’t know… almond cookies sound weird, right? Idk if that goes together. Walnuts are better for cookies. 🤔

    2. User avatar man.dare says:

      5 stars
Yes, you can use almonds! They will add a different flavor but should work just fine. I’ve tried it with almonds before, and they turned out yummy!

Banana cookie?? I thought this was ice cream. LOL! So confused.

    1. User avatar monet.satterfield says:

      5 stars
Haha, I can see where the confusion is! They do sound more like a dessert than a cookie. But trust me, they are delicious in their own way! 🍌🍪

    2. 2 stars
IDK why you’d think it’s ice cream, it’s a cookie recipe. Must’ve read it wrong. 😂

  26. User avatar lauren.gleason5 says:

This is not a cookie! It’s more like a granola bar. Disappointed.

    1. User avatar ashlea.oreilly68 says:

      4 stars
I totally get what you mean! They don’t have that classic cookie texture. More like a healthy snack!

  27. 5 stars
Baked these for a potluck. Everyone loved them! Will make again!

  28. User avatar jeanine.bins says:

Not my favorite, but they’re okay I guess. Too chewy for my liking.
