Ingredients
  

  • 2 cucumbers sliced
  • 2 plums slices
  • 0.25 cups red onion thinly sliced
  • 1/4 cup mint leaves torn, fresh
  • 1 tbsp lime juice
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions
 

  • In a large bowl, combine the sliced cucumbers, plums, red onion, and torn mint leaves.
  • In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
  • Pour the dressing over the salad and toss to combine.
  • Serve immediately and enjoy!
