      Haha I love that—15 minutes really is the sweet spot. Missing the mint is tragic but not fatal; lime + olive oil still makes it tasty. 😄 Next time, definitely add it back!

      I get you—cucumber/plum can be super gentle unless the dressing really pops. I’d try a little more lime (even zest if you’ve got it) and let it sit 10–15 min after tossing so the salt wakes everything up. Also check the plums: if they’re not ripe/sweet, it’ll taste bland no matter what.
