Rotelle with burrata, spinach, and almonds is a pasta dish that balances creaminess, freshness, and a satisfying crunch in every bite. The unique combination of ingredients offers a delightful contrast of textures and flavors, making it a perfect choice for a light but indulgent meal. Whether you’re preparing it for a weeknight dinner or a special occasion, this dish brings comfort and elegance to the table.
The rotelle pasta, with its wheel-like shape, is ideal for holding onto the creamy sauce and bits of spinach, creating a hearty bite every time. The spinach adds a touch of freshness and color to the dish, while the burrata, with its soft, creamy center, brings a luxurious richness that ties everything together. The burrata melts slightly when mixed with the hot pasta, making every bite indulgent and comforting.
The addition of toasted almonds introduces a satisfying crunch, complementing the creaminess of the burrata and the tender spinach. The nuts also add a subtle, nutty flavor that enhances the overall taste, making each forkful a perfect balance of creamy, crunchy, and savory.
To elevate the dish, a simple garlic and olive oil sauce or a light lemony dressing can be drizzled over the top. This brings out the natural flavors of the ingredients without overpowering them. A sprinkle of parmesan can also add an extra touch of umami if desired.

Wow, I didn’t know almonds went with pasta. What a lovely surprise!
Yummy! First time cooking burrata. It was a hit at dinner! Also, I added some red pepper flakes for spice! 🔥
My kids loved it! Spinach usually gets rejected but this time they cleaned their plates! 🤗
Instructions were a bit confusing. What does ‘al dente’ mean? I just overcooked my pasta. 😩
Al dente means the pasta is firm to the bite, not mushy. You might try cooking it a minute less next time!
Mine turned out too soggy… maybe I cooked the spinach too long? Wont give up tho.
Easy to make but I think it needs something more…maybe a little lemon juice?
Yum! I added grilled chicken to it and it was fantastic! Perfect for dinner.
I didn’t have burrata, so I used mozzarella. Still turned out pretty good! Not sure about the almonds tho.
I forgot the garlic and used mozzarella instead of burrata…still turned out tasty! 👌
What is rotelle? Is that a type of cheese or pasta? I’m confused. 🤔
This was too salty for my taste. I never put salt in my pasta. Anyway, my kids liked it.
Made this tonight and it tasted like heaven! The almonds added a nice crunch. Yum! 😋
So glad you enjoyed it! The crunch really does make a difference. 😍
Too many greens for my taste, I’m not a salad person. Gave it a 2 cause the cheese was nice.
Delicious! Next time, I’ll try with different nuts. Great base recipe.
This recipe is so simple and delicious! I loved the creaminess of the burrata with the spinach. Will make again!
Sounds easy enough, but isn’t burrata a bit overrated? I feel like it’s just fancy cheese for show.
I’m so glad you loved it! The burrata does make everything more creamy. What did you serve it with?
Who puts nuts in pasta??? Isn’t that weird? I just don’t understand. 1 star.
Nuts in pasta is actually a thing in some cuisines! I think it adds a nice crunch. But if it’s not for you, that’s okay! Different tastes. 4 stars.
Delicious! But how did ya cook the almonds? I just threw them in raw! 🙂
You should toast the almonds before adding them! Just cook them in a pan for a few minutes until they’re golden. It makes a big difference! 🙂
This dish is absolutely divine! The burrata adds such a creamy texture. Love it!
Best dish ever!! 😍 I’m making this for my dinner party next week, thanks for sharing!
You’re gonna love it! That burrata is so creamy, it’s a crowd-pleaser for sure! 😊
I made it without olive oil and it turned out not too bad! Healthier I think? LOL.
That’s interesting! I wonder if it changed the flavor a lot. I’ll have to try it your way! 😊
is burrata really cheese? I thought it’s just fancy cream. 🤨
I don’t get why everyone loves burrata. I found this dish kinda bland. 2 stars.
Super easy to make! I added some chili flakes for a kick. Yum! Will make again.
Next time I make this I’ll add some chicken! Gotta have protein, right? 😂
Thought I could use different pasta, but it still turned out great! Swapped rotelle for penne and worked like a charm.
So easy and quick! I added some cherry tomatoes and it was perfect! 🍅
I love adding cherry tomatoes too! They give a nice splash of flavor and color! 🌈
Quick and yummy! The kids liked it. Perfect for a weeknight meal. 🌟
It was yumm but not filling enough. I added some grilled chicken to mine.
Grilled chicken sounds like a great addition! I’ll have to try that next time. 😋
Ohhh I totally overcooked the pasta! It was mushy ugh 😩 Next time I’ll watch it closer.
Honestly, I didn’t love it. The flavor was kinda bland. Needed more seasoning or something.
This recipe is so delish! The burrata just makes it creamy and delicious. 5 stars!
Simple, yet delicious! I didn’t have almonds, so I threw in some walnuts and it was great!
Meh, it was okay. I think it needed more seasoning or something. Not very exciting.
The recipe is easy but I thought rotelle was a kind of cheese? Confused me a bit!
Easy to follow! I love how quick it is to make after work. Will make again!
I can’t believe I never tried burrata before! This was a game changer for my pasta nights.
I dunno, the almonds feel kinda outta place. I don’t think they were needed. Made it too crunchy for my taste.
Rotelle? Never heard of it. Can I use regular spaghetti instead?
This recipe was a hit at my dinner party! Everyone loved it! The burrata is just dreamy. 😊
Spinach? Yuck. I just skipped it and it tasted fine lol.
Wayyy too many steps for me. Just boil pasta and dump stuff in? Nah.
My kids said it was ‘yucky’ 🙄 but I thought it was pretty solid – can I substitute with cheddar?
Very underwhelming. I thought it would taste better than it looks. 🙁
This was delicious! The burrata really adds a nice touch. Will definitely make again!
Honestly, my burrata was a bit expired. Made it taste weird. Be careful with what you buy!
Spinach is gross. But burrata is yum. I just ate the burrata okay.
I dunno, spinach is super healthy! But if you love burrata, maybe just leave out the spinach? 🧀
Spinach can be an acquired taste! But burrata really makes everything better. Have you tried it with just the pasta and cheese?
Why do people put nuts in pasta? That’s just odd.
I think the nuts add a nice crunch and extra protein! It’s not that weird, just different!
The instructions were kinda unclear. What if I don’t have burrata? Can I use mozzarella? Confused!
Hey, I think mozzarella could work! It won’t be the same, but it’s cheese, ya know? Just try to drain it well before adding it!
This was amazing! The burrata just melts in your mouth. Definitely making it again.
