Ingredients
  

  • 100 grams Rotelle pasta uncooked
  • 1 ball Burrata cheese fresh
  • 2 cups spinach fresh, washed
  • 1/4 cup almonds sliced, toasted
  • 2 tablespoons olive oil extra virgin
  • 1 clove garlic minced
  • to taste salt
  • to taste black pepper freshly ground

Instructions
 

  • Cook the rotelle pasta according to the package instructions until al dente. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  • Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
  • Add the cooked pasta to the skillet and toss to combine with the spinach and garlic.
  • Season with salt and freshly ground black pepper to taste.
  • Transfer the pasta mixture to a serving plate and top with the fresh burrata cheese.
  • Sprinkle the toasted almond slices over the top and serve immediately.
