This Mediterranean lentil pasta is a delicious and healthy dish that is packed with flavor and nutrients.

Ingredients
  

  • 8 ounces whole wheat penne pasta
  • 1 cup dried lentils
  • 2 tbsp olive oil
  • onion small, diced
  • 2 cloves garlic minced
  • 1 red bell pepper diced
  • 1 yellow bell pepper diced
  • 1 zucchini diced
  • 1 cup cherry tomatoes halved
  • 1/4 cup Kalamata olives pitted and halved
  • 2 tbsp lemon juice fresh
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp thyme dried
  • Salt and pepper to taste
  • parsley chopped, for garnish, fresh

Instructions
 

  • Cook the whole wheat penne pasta according to package instructions. Drain and set aside.
  • In a separate pot, cook the dried lentils according to package instructions. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add the diced onion and minced garlic and cook until onion is translucent.
  • Add the diced red bell pepper, yellow bell pepper, and zucchini to the skillet. Cook for 5 minutes, until vegetables are tender.
  • Add the cooked lentils, cherry tomatoes, Kalamata olives, fresh lemon juice, dried oregano, dried basil, dried thyme, salt, and pepper to the skillet. Stir to combine.
  • Add the cooked pasta to the skillet and toss everything together until well mixed.
  • Cook for an additional 2-3 minutes, until pasta is heated through.
  • Serve the Mediterranean lentil pasta hot, garnished with fresh chopped parsley.

    I liked it, but my sauce was a little dry. Maybe because I drained the lentils too well? I’ll try reserving some pasta water next time to loosen it up.

      Dry sauce for me too once. I think it’s mostly because there’s no real “liquid” in the recipe besides lemon juice. Pasta water definitely helps—good call.

      I get that—this combo can thicken a lot if the lentils are drained hard. Reserving pasta water is a great fix. I also splash in a bit more lemon/olive oil at the end.

    Made this tonight and it’s honestly super comforting—lentils + lemon is such a nice combo. The veggies held up well too. I did add a pinch of chili flakes at the end. 10/10.

    Could’ve used more seasoning. I followed the salt/pepper “to taste” but it just felt bland. Added extra oregano and a squeeze more lemon and it improved a lot.

      Totally agree. “To taste” is tricky with lentils + whole wheat—mine needed more lemon and salt too. Glad your oregano fix worked!

      Chopping is part of cooking! But I get it, it can be a lot. Maybe try pre-chopped veggies next time?

    I followed the steps and it turned out bland… like, “where’s the salt?” kind of bland. I think I under-seasoned. After adding extra pepper and lemon, it got better.

      Love this! The olive + lemon combo really does make it taste less “kid pasta” and more like actual Mediterranean food 😄
