Ingredients
- 8 ounces farfalle pasta
- 2 cups diced vegetables (such as bell peppers zucchini, and eggplant)
- 2 tbsp olive oil
- Salt and pepper to taste
- 4 ounces goat cheese crumbled
- Fresh basil leaves for garnish
Instructions
- Cook the farfalle pasta according to package instructions. Drain and set aside.
- Preheat the oven to 400°F (200°C).
- Spread the diced vegetables on a baking sheet. Drizzle with olive oil and season with salt and pepper. Toss to coat.
