Eggplant and Spinach Orzo

May 8, 2026

Eggplant and spinach orzo is a flavorful and nourishing dish that combines the rich, tender texture of roasted eggplant with the earthiness of fresh spinach, all tossed in the light, slightly chewy orzo pasta. This dish is a wonderful balance of savory and fresh, making it a perfect light dinner or a hearty side to any main course.

To begin, the eggplant is cut into small cubes and roasted with olive oil, salt, and pepper until golden brown and soft. Roasting the eggplant enhances its natural sweetness and gives it a savory, caramelized flavor that complements the other ingredients in the dish. You can also add a bit of garlic or herbs like thyme or oregano to the roasting pan for an extra burst of flavor.

While the eggplant roasts, cook the orzo in salted water until al dente. Orzo, with its small, rice-like shape, absorbs flavors beautifully and provides a lovely texture that pairs well with the vegetables.

Next, sauté fresh spinach in a bit of olive oil until it wilts down. The spinach adds a touch of green freshness to the dish, balancing out the richness of the eggplant. You can also toss in a small amount of garlic for added depth of flavor. Once the spinach is wilted, combine it with the roasted eggplant and orzo in a large pan, stirring everything together to incorporate the flavors.

To finish the dish, drizzle with olive oil for a bit of richness, and add salt and pepper to taste. A sprinkle of Parmesan cheese can be added for a creamy, salty touch, or for a more Mediterranean twist, use crumbled feta. Fresh basil or parsley can be used as a garnish to add a burst of color and freshness.

Eggplant and spinach orzo is a versatile dish that can be served warm or at room temperature, making it ideal for meal prep or potlucks. It’s light yet filling, packed with nutrients, and can be easily customized with additional ingredients like roasted peppers, pine nuts, or olives for extra flavor and texture.

Whether you’re looking for a quick and easy weeknight meal or a side to complement a larger spread, eggplant and spinach orzo is sure to satisfy. With its combination of hearty vegetables, fresh greens, and tender pasta, it’s a dish that’s both comforting and nourishing.

Not sure about this recipe. The eggplant was too mushy for my taste. I prefer it grilled or fried. 🤔

    1. User avatar dustin.heidenreich30 says:

      4 stars
I get where you’re coming from! Eggplant can definitely get mushy if it’s overcooked. Grilling it is a great idea! Maybe next time try reducing the roasting time.

    2. User avatar dick.sipes27 says:

      3 stars
Mushy? Nah, I loved it! Eggplant gets a bad rap sometimes. But fried is better, I agree. Just depends on how you like it, I guess.
