Delicious and easy-to-make vegan chocolate chip cookies that are soft, chewy, and sure to satisfy your sweet tooth.

Ingredients
  

  • 1 cup all-purpose flour sifted
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup coconut oil melted and cooled
  • 1/2 cup brown sugar packed
  • 1/4 cup cane sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon ground flaxseeds mixed with 3 tablespoons water
  • 1 cup vegan chocolate chips

Instructions
 

  • Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
  • In a small bowl, combine the ground flaxseeds with water and let it sit for a few minutes to thicken.
  • In a large mixing bowl, whisk together the flour, baking soda, and salt.
  • In another bowl, mix the melted coconut oil, brown sugar, cane sugar, vanilla extract, and flaxseed mixture until well combined.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  • Fold in the vegan chocolate chips.
  • Scoop tablespoon-sized amounts of dough onto the prepared baking sheet, leaving enough space between each cookie.
  • Bake for 10-12 minutes, or until the cookies are lightly golden on the edges.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

      Getting the flax thing to work is easy! Just make sure you let it sit long enough to thicken. It’s like magic! 😊
