Ingredients
  

  • 4 whole artichokes trimmed and cut in half
  • 1/2 cup olive oil extra virgin
  • 1/4 cup lemon juice freshly squeezed
  • 3 cloves garlic minced
  • 1 tsp salt
  • 1/2 tsp black pepper freshly ground
  • 1/4 tsp red pepper flakes optional
  • 1/4 cup parsley chopped fresh

Instructions
 

  • Trim the artichokes and cut them in half.
  • In a large pot, bring water to a boil and add the artichoke halves. Cook for about 15-20 minutes until tender.
  • In a bowl, whisk together olive oil, lemon juice, minced garlic, salt, black pepper, and red pepper flakes if using.
  • Drain the artichokes and let them cool slightly. Then, toss them in the marinade.
  • Allow the artichokes to marinate for at least an hour before serving. Garnish with chopped parsley.
