Instructions
Trim the artichokes and cut them in half.
In a large pot, bring water to a boil and add the artichoke halves. Cook for about 15-20 minutes until tender.
In a bowl, whisk together olive oil, lemon juice, minced garlic, salt, black pepper, and red pepper flakes if using.
Drain the artichokes and let them cool slightly. Then, toss them in the marinade.
Allow the artichokes to marinate for at least an hour before serving. Garnish with chopped parsley.
