Stuffed bell peppers have long been a go-to meal for anyone who wants a satisfying, balanced plate with built-in portion control. But when you swap out the usual heavy fillings for light, fresh ingredients like cilantro lime rice and avocado, you get something that feels both nourishing and exciting. These Cilantro Lime Rice and Avocado Stuffed Bell Peppers bring a bright, summery flavor to the table and work well for lunch, dinner, or even as a shareable side dish.
At the heart of this dish is the cilantro lime rice, which offers a vibrant and slightly tangy flavor. It’s the kind of rice that feels anything but plain, with each bite infused with citrus and fresh herbs. Paired with creamy chunks of ripe avocado, the texture becomes more satisfying and comforting. The natural richness of avocado plays beautifully with the acidity of the lime, creating a balanced bite that doesn’t need much else to shine.
The bell peppers serve as both a vessel and a component of the dish. Roasting them slightly softens their texture and brings out a hint of sweetness, which complements the savory filling. You can use any color pepper you like, but red and yellow tend to offer the sweetest flavor and the most striking contrast on the plate.
One of the best things about this recipe is how customizable it is. Want more protein? Toss in some black beans or grilled chicken. Craving extra crunch? Top it with toasted pepitas or fresh corn. These stuffed peppers are naturally vegetarian and gluten-free, making them a great option for feeding a crowd with dietary needs in mind.
Whether you’re prepping a quick weeknight dinner or looking for a vibrant dish to share at a potluck, these Cilantro Lime Rice and Avocado Stuffed Bell Peppers are fresh, flavorful, and endlessly satisfying. They prove that healthy eating doesn’t have to be boring and that a simple twist on a classic can deliver something truly memorable.

These were okay, but next time I think I’ll just stick to my standard stuffed peppers.
Not my fav. I thought it could use more flavor… maybe some cheese? 🤷♂️
I think adding some cheese would make it creamier! You can never go wrong with cheese! 🧀🇲🇽
I didn’t like the texture of the avocados in the rice. It was mushy. Maybe I’ll leave them out next time.
Maybe if you put more cheese on top?? Just sayin’
Cheese? This ain’t a pizza! It’s all about the fresh flavors, dude!
Just made these tonight. Super easy and delicious! My kids loved them too!
This was the first time making stuffed peppers and wow, I think I did great! Thanks for the recipe.
I don’t know, man. It seems like too many ingredients for a simple dish. Bell peppers are overrated if you ask me.
I think it’s worth trying! The flavors must be amazing together. Bell peppers can be delicious if cooked right. Give it a shot!
Nah, I still won’t like it. Too many steps and ingredients, not worth the hassle. I’d rather make something simpler.
It was okay, but I felt like it needed more seasoning. Maybe some cumin or chili powder would help.
These were delicious! I added some cheese on top before baking and it was a hit with the kids. Will be making again.
I used brown rice instead of white and they turned out really good. Healthier option! 👍
Not a fan of cilantro, so I swapped it for parsley. Still tasted good but probably not as fresh.
I think parsley is a bit milder than cilantro, but I’m glad you enjoyed it! Maybe try it with cilantro next time to see the difference!
I thought this was really bland. Needs more seasoning.
Bland? Seriously? It’s all about personal taste! You can season it however you like.
I don’t know, I thought it was tasty! Maybe try adding some chili flakes next time?
Stuffed peppers? Sounds fancy! 😂 Will try with my bell peppers in fridge!
Are those even gonna taste good? I mean, rice in peppers? Hmm…
I love stuffed peppers! Can’t wait to see how yours turn out! 🌶️
I dunno… seems kinda bland. Maybe try addin’ some cheese or spices?
I think you’re right! Cheese would make it better. I’m all about that flavor, ya know?
Just made this for my family and they devoured every last bite! So good!
These stuffed peppers were fantastic! My kids loved them. Will definitely make again!
These were so good! Easy to make and perfect for dinner. 5 stars!
Soo easy to make! I didn’t have cilantro so I used parsley instead. Still good!
Meh, didn’t turn out like I expected. The rice got mushy for me 🙁
This recipe is a game changer! Love the freshness of the cilantro and lime. Will definitely make again!
Absolutely delicious! I added some black beans and it was a hit!
This seems like a lot of work for some rice. I dunno about this recipe.
Wait, it says 375°F but my oven usually does what it wants. Mine burned. 🤦♀️
Wait, do you have to cook the rice first or can you put raw rice in with everything? 🤔
Absolutely loved this recipe! The flavors were amazing and it was super easy to make. Will definitely do it again!
I’m so glad you enjoyed it! It’s one of my favorites too. So easy and fresh! 🌿
I don’t know why you add avocado, it turned mushy. Just stick with rice and peppers.
The lime juice really brings it all together. Diced tomatoes are optional, right?
Optional? I thought tomatoes were a must! Why would you not want them? 🤔
Yes, you can leave out the tomatoes! I usually skip them too. The lime juice does add a great flavor.
These look good and all, but I don’t understand why you would bake them? Isn’t that pointless?
This recipe is a disaster! My peppers fell apart and it tasted weird. Not impressed.
Sounds like you did something wrong. I’ve made these before and they turned out fine. Did you follow the instructions exactly?
I actually loved this recipe! The flavors were so fresh, and my peppers held up perfectly. Maybe you overcooked them?
I’m not a fan of cilantro, but my husband loved this dish! He said it was very refreshing.
Is broiling an option? I like crispy top! Gonna try next time!
I tried this, but the rice got mushy. Not sure what went wrong. Maybe overcooked?
Mushy rice? I always say ‘just cook till it’s fluffy!’ Try less water next time! 👩🍳
I think you might’ve cooked the rice for too long before mixing it in. I usually let mine sit until just tender, so it holds up better in dishes like this.
Very fresh taste! Cilantro is my favorite herb. 10/10 would recommend!
Too spicy for me! I thought it wouldn’t be but my peppers were hotter then I thought lol.
Do I really need to preheat the oven? Seems like a waste of time.
Yummmm! So good! I added some chicken for protein. You should try it too!
The avocados got all brown when I left them. I don’t understand why it said to dice them.
These stuffed peppers are fantastic! I added some ground turkey to the rice mix, and my family loved it. Will make again!
I love the idea of adding ground turkey! Makes it more filling. Can’t wait to try it myself!
Stuffed peppers? I dunno, they always seem a bit bland to me. Maybe I’ll just stick to pizza.
Delicious and healthy! Great way to use up my leftover rice 👍.
I love cilantro, so these were perfect for me! Will make again!
I hate cilantro! How do you even like it? It’s so strong.
Cilantro is life! I’m glad you enjoyed it! Can’t wait to make it myself.
My kids didn’t like it very much. They said it looked strange. Maybe I overcooked the peppers?
Baked these last night, came out perfect! #Yum
Perfect? I tried making stuffed peppers once, and they turned out mushy. Maybe you just got lucky!
That’s awesome! I love when a recipe turns out just right. What did you serve with it?
Can this be made with other veggies? Asking for a friend.
Uh, not sure why this is rated so high; they tasted weird to me. Maybe I did something wrong? 😕
Maybe you need to add more salt or spices? That can make a huge difference! 🌶️
I don’t know what u did, but this recipe is bomb! I make it all the time! 😍
Why would anyone stuff bell peppers? I just take the rice and eat it like a bowl. No need for the peppers, lol.
Can this be made with brown rice? I never have white rice in the house and I want a healthy option!
Easy recipe! I substituted lime for lemon, and it still tasted good. Thanks!
That’s awesome! Lime is a great twist. Gonna try it like this for sure.
Best recipe ever! Made it for my family and they loved it. 😍
Not a fan of bell peppers, but my partner loved it. Maybe I’ll try it with zucchini instead?
Zucchini sounds like a great idea! It’ll give it a different flavor. I think your partner will still enjoy it!
Super easy to make! Just throw it all in and you’re done. Perfect for busy weeknights! 👍
I made these last night! So easy and delicious! Thanks for sharing! 😊
Looks good but I ain’t a fan of bell peppers. Can’t you just make it with another veggie? 🤔
Where’s the meat?? 😅 I added some ground turkey and it was better! Just saying!
Not impressed. The avocado turned brown too fast. Also, why so much cilantro?
I get where you’re coming from! Avocados can be tricky. But if you squeeze a bit of lemon on it, it helps keep it green for longer. And cilantro is love it or hate it! 🤷♂️
yum! I added some cheese on top and it turned out wonderful!
Cheese sounds great! I should try that next time. Did you use any specific type of cheese?
Very yummy! I even added some cheese on top before baking. Will make again!
Cheese on top sounds delicious! Glad you liked it! 😊
