A refreshing and healthy salad made with grilled chicken and daikon radish.
Ingredients
- 2 chicken breasts
- 1 daikon radish julienned
- 1 carrot julienned
- 1 cucumber sliced
- 1 red onion thinly sliced
- 1/4 cup cilantro chopped, fresh
- 1/4 cup mint chopped, fresh
- 1 lime juice
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- Salt and pepper to taste
Instructions
- Preheat grill to medium-high heat.
- Season chicken breasts with salt and pepper.
- Grill chicken for 4-5 minutes on each side, or until cooked through. Remove from grill and let rest for a few minutes before slicing.
- In a large bowl, combine daikon radish, carrot, cucumber, red onion, cilantro, and mint.
- In a small bowl, whisk together lime juice, soy sauce, and sesame oil. Pour over salad ingredients and toss to combine.
- Slice grilled chicken and arrange on top of salad. Serve immediately.

I found this recipe to be really easy to follow! The chicken came out juicy and the dressing was sooo good. Only I added some chili flakes for a kick!
Are you sure it was easy? Seems like a lot of ingredients to me. I don’t know if I could handle all that chopping.

Not impressed. My chicken got burnt on the grill. Next time will bake it instead. Too much hassle.

I don’t know about this daikon stuff, but my kids didn’t eat it. Maybe try with a different veggie? They love cucumbers tho.
I understand your concern! Daikon can be an acquired taste, maybe try adding more cucumbers like you suggested. It might be something they enjoy more! 😊
Tastes fine but you could’ve added a lot more things, like avocados or nuts, or else it’s kinda just soup? Am I missin something?
